    Kay anytime you hear butter making a noise like that in a soup pot turn the heat down. Butter tastes good brown but tastes really bitter when burnt. Soup cooks for a long time and stuff on the bottom burns easily if you don't keep the flame low and stir it. It started burning (black) when the smoke appeared, and you can see burnt pieces floating around when you add the stock. It didn't reach a froth, the bubbles were from something called flash boil when a small amount of liquid is heated too quickly. Butter froth will make the entire top layer of butter a coating of bubbles, like soap in a bath tub.

    I'm a BIG fan / lover of potatoe soup !!! Great job Kay ! 👍👍👍 , Thumbs up ! I eat mine with some Sesame bread sticks , not too expensive , they come in a packet of 20 ... Also plain salted flavour ! It's nice , as you can dip them in the soup which soaks into the breadsticks ! Love to you both , Yentl 👍👍❤❤❤❤❤🐕

    Put a damp dish cloth or kitchen roll under yer chopping board. It won't slide around as much. Its much safer.

    Kay, try watching a few CZcams videos on knife skills and knife selection. Once you learn them, you will understand that a blunt knife is more dangerous than a sharp knife. I was the same many years ago, afraid of sharp knives. When you learn which knives to use for certain jobs and learn how to use them, it's amazing. You can prepare food so quickly and chop things super fine with ease. You only need probably 3 knives at home.

    Not too much, it's a soup. It needs a bigger liquid to ingredient ratio, careful about using metal spoons, wooden will stop you burning yourself. Well done cooking. Hope it was nice!

    When I get a new knife I cut potatoes, onions etc in half. Then put the flat side down and continue cooking. It gives you a more steady chopping area.

      This little-known dinner recipe, originated in the south of France, is sure to be a hit at the weekday dinner table. With its fusion of flavours and blend of easily acquired herbs and spices, this dish is sure to satisfy even the fussiest of eaters.
      Ingredients
      • 500g beef mince
      • 2 carrots, sliced or diced
      • A large onion, halved
      • 2 boiled eggs (prepare before cooking or purchase from supermarket)
      • 125g packet batter mix (we used tempura)
      • 1tbsp lard
      • 1 teabag
      • 3tbsp mayonnaise
      • 300g of your favourite pasta shapes
      • 1 garlic bulb
      • 1 stalk dried lemon grass
      • 1tsp mint
      Method
      1. Bring a large pan of water to the boil and place the mince in once it reaches rolling boil. After 5 minutes, add the lard. Allow to boil for 20 minutes.
      Tip: Ensure that the lard does not melt too quickly as this may spoil the flavour.
      2. Meanwhile prepare another pan of water and bring to the boil. Once it reaches rolling boil, place the carrots, half of the onion, the garlic bulb, and the lemon grass. Leave to boil for 10 minutes.
      3. Add the vegetable mixture to the mince and lard blend. Allow to boil for a further 5 minutes.
      4. In a separate bowl, add the mayonnaise and cut open the teabag. Add the contents of the teabag to the mayonnaise and mix together until blended. This method is known as tasse à thé and is a common feature of French cookery courses.
      5. Add the mayonnaise and teabag mix to the pan. Also add the packet batter mix, boiled eggs, pasta shapes and remainder of the onion. Allow to boil for 25 minutes.
      6. Once boiled serve with a sprinkle of mint. Bon Appétit!

    Get yourself a paring knife for cutting up your veg instead of a great big kitchen knife. You get better control and there isn't as much chance of you amputating your fingers.
