Helen, can you do a video on your favorite store bought Kimchi?? I'd be interested to know all the different brands. I've made your Kimchi at my home and I haven't found any store bought Kimchi that is as good as your homemade. Even the kimchi my local Korean restaurant serves is not that good since I've made yours.
Hi, homemade kimchi is always tastier than store-bought kimchi, in my opinion. Now there are rare occasions when store-bought kimchi is as or more tasty than homemade kimchi. And usually, these are very expensive. In general, when store make kimchi to sell, they have to keep a profit margin and be mindful of the ingredients they add to keep the profit margin afloat. Also, I can't do a review on different brands of kimchi since this varies depending on where you live. For example, in LA or NYC, the brands are usually local to the area. Yes, you can certainly add more sugar to make it sweeter. Personally, I do not to taste the sweetness in my Kimchi Fried Rice. I prefer to just add a small amount of sugar to round out the spiciness. Salt, dashida, and butter are more helpful in enhancing the flavors.
Where do you get the extra juice. my left over Kimchi would be dry if swiped the juice from it to add to this fried rice. Oh, I made your kimchi stew this week. so good. Couldn't have been better.

Can I use long grain rice?
U can use whatever rice but it will taste the best with Korean rice. If u can’t get Korean rice, buy the fanciest grade medium grain rice. Big supermarkets usually have medium grain white rice

You can use any rice but it will be the tastiest with Korean rice. If you can’t get Korean rice, use fancy grade medium grain rice. Big supermarkets usually sell white medium grain rice.
