Homemade Pan Mee 家常板面

  • Simple soupy flat noodles, we call it Pan Mee. The noodle is made from flour, egg, water & oil. In this video, we use only anchovies (ikan bilis) & ginger for the broth. The most important thing, NO MSG added! You can drink the soup wholeheartedly! Check out our recipe here:-
    INGREDIENTS FOR MINCED MEAT TOPPING
    -----------------------------------------------------------------------
    6 CLOVES GARLIC
    6 CLOVES SHALLOTS
    8 PCS DRIED MUSHROOMS
    6 PCS WOOD EAR MUSHROOMS
    500g MINCED PORK
    1 TABLESPOON SHAO XING WINE
    3 TABLESPOON OYSTER SAUCE
    100ml SOY SAUCE
    1 TABLESPOON DARK SOY SAUCE
    1/2 TABLESPOON SUGAR
    FEW DASH OF WHITE PEPPER
    1 TEASPOON SESAME SEED OIL
    200ml WATER
    COOKING OIL 3 TABLESPOON
    INGREDIENTS FOR NOODLE DOUGH

    500g ALL PURPOSE FLOUR
    1 EGG
    1 TABLESPOON COOKING OIL
    200ml WATER
    INGREDIENTS FOR SOUP
    ----------------------------------------
    3.5L WATER
    200g ANCHOVIES
    2 PCS GINGER CRUSHED
    SIDE INGREDIENTS FOR NOODLE

    EGG
    WATER SPINACH
    GARNISHING

    Made this today..never know the topping is so easy to cook and taste as good as kopitiam bought noodle. I used chicken & no wine added. But i still need to practice in preparing the noodle. Mine was so chewy and thick.

Home cook is normally subject to your taste and preference, but we notice a lot of youngsters or young couples who are first time in kitchen might need some indication/measurement of the ingredients.     I was wondering what to cook for lunch. I haven't cook pm for a very long time n have forgotten how to go about how much to cook for two persons. N I thought , let me turn for help. I choose your recipe n believe me have picked the right choice . It was v good. I tear the dough by hand it was a bit thick n chewy . We enjoyed it anyway. Tq for sharing your recipe . God bless you

    Love your video I really enjoy it , 3 Question to ask , 1st Question the anchovies b4 u fry with oil do I need to wash with water or just fry ?
    2nd Question same, boiling the soup with anchovies need to wash?
    3rd where do u buy the pan mee machine is it seah huat and how much? Tks

      1) yes wash with water then dry them using oven. 2) yes need. 3) not sure where u stay but I get this in PJ. Those shops selling ceramic wares. Once again, thanks for watching!

I live in Singapore, the noodles maker I bought at sg beauty world level 2 selling cookware etc....forget thr unit number , cost is $28.50 China brand , Italy brand is $88+ .even online u can get it at $29-$39+ shopee or Lazada.     May i know how to store the noodle? To not stick together..can put in freezer?

      Hello... missed your msg... Well in this video our noodles are cater for 5-6 pax and we didn't have any leftovers. However i have googled some article on how to store your fresh noodles. It mentioned that you have to dust it with some flour and keep in an air tight container. It can be kept for 2 days in the refrigerator.       Oil makes the dough more soft and supple. Also make the dough easier to roll out.
