    Yayla Çorbası (Yoghurt Soup) Recipe
    Ingredients:
    1 cup rice
    1/2 cup plain yoghurt
    1 egg
    2 tablespoons all-purpose flour
    6 cups chicken or vegetable broth
    Salt to taste
    For the topping:
    2 tablespoons butter
    1 teaspoon dried mint
    Instructions:
    Rinse the rice under cold water until the water runs clear.
    In a pot, bring the chicken or vegetable broth to a boil. Add the rinsed rice and cook until the rice is tender.
    In a bowl, whisk together yoghurt, egg, and flour until smooth.
    Gradually add a ladle of hot broth to the yoghurt mixture, whisking constantly. This helps temper the yoghurt.
    Slowly pour the yoghurt mixture into the pot, stirring continuously to prevent curdling.
    Cook over low heat, stirring consistently, until the soup thickens.
    Season with salt to taste.
    In a small pan, melt the butter and add dried mint. Sauté until the mint becomes fragrant and the butter is infused.
    Pour the minted butter over the soup before serving.
    Serve hot, garnished with additional dried mint if desired. Enjoy this creamy and comforting Yayla Çorbası!
