What is the difference between the Harder & Steenbeck Infinity airbrushes?

I believe so - although some might be triple plated. Several parts are interchangeable with the Evolution too.

I thought the "V 2.0" on the final model meant that it featured the improved needle made of harder material?

That's a good point, I think you are right, but also, with many users using acrylics the bigger needle and nozzle etc means less chance of tip dry and blockages.
