    When you take a bite of a hot pepper, your body reacts as if your mouth is on fire -- because that's essentially what you've told your brain! Rose Eveleth details the science and history behind spicy foods, giving insights into why some people continue to pay the painful price for a little spice.

    Having worked in a tattoo shop, I can say it's fascinating the varying levels of pain tolerance people have. It never seems to be correlated to gender, race, toughness, etc., but rather attitude. I feel like this video sorta confirmed that theory but which spicy food instead.

    Can't believe this didn't bring up the fact that, once you reach enough pain level with spicy foods, your body releases endorphins to counteract the pain. That is the "head rush" people talk about when they eat foods that are spicy out of their comfort zone. Spicy foods are like a drug. You keep wanting spicier food to get that head rush of endorphins. And man does it feel good. Very pleasurable, actually.

    Growing up in Indonesia, I used to eat spicy food since I was a child as we have varies spices such as chili, cayenne, pepper, nutmeg, clove, galangal, shallot, etc. Unfortunately, thats also the main reason why Netherland occupied us long time ago😕.
    Anyway, maybe thats why my spiciness tolerance level is above the average, especially when ordering food with frens from other country, they usually think its too hot n spicy while I am enjoying the food n being okay with it :)

      @daharos Před rokem +3

      yes and no. Ghost Pepper has no need to exist except to convince someone they are cool or tough for eating something so needlessly hot. but your point on taste is spot on. Mexican salsas can vary in intensity, but the only truly good ones TASTE great. even mild ones can be delicious because of the ingredients and how they play off each other. I usually use at least two different types of chile peppers when making something that calls for it, like in my guacamole.

    The idea that people who like spicy foods, just 'like the pain more' and dont experience less discomfort seems very wrong to me. My diet went from blander than average to spicier than average after marrying my wife who grew up in Indonesia where they like their food REALLY hot. In the space of a couple years my tolerance for spicy food has gone way up. Food that used to be uncomfortably hot at a mainstream American restaurant is barely noticeable for me now, to the point where a couple times I complained to the staff thinking I had gotten the mild dish instead of spicy that I ordered.

    She put spicy foods in a negative light, as if she had some sort of bias. It was a little odd... I enjoy spicy foods because there are certain tastes that you just can't replicate without the spice. I'm not sure what the science behind that is, but anyone who enjoys hot things can vouch, I'm sure.

    • @SuperNumber420
      @SuperNumber420 Před 10 lety +24

      ***** You misunderstood. I get the separation between taste and thermoception, what I am saying is that there are certain tastes that do not exist without the contributing spice. The taste of pepperoncinis, for example, cannot be experience without the spice, as far as I know. There are no flavors that mimic spicy peppers without also mimicking the thermoceptive stimulation. So, despite what this video says, there is some sort of interaction between taste and thermoception, however thermoception itself is not a taste.
      I personally do not give a flip who likes and doesn't like spicy food. The statement I made about the bias was unrelated to the statement made about tastes and spice. Especially towards the end, she seemed as if she was (although very obscurely, and I'm sure unintentionally) trying to make spicy foods seem less attractive to this video's viewers.

    There's this province in my country where everyone EVERYONE eats spicy. All their foods are spicy. Even their ice cream. When I asked one of the locals why the heck they exist like this, she said it's because spicy food can still feel hot and fresh even when cold. It also feels bland (like, less salty or less sweet) when things aren't spiced. This perception on taste is more likely genetic.

    Lol. Having grown up as a Bangladeshi that has hands down the hottest cuisine in the planet and growing up as a person who loves the taste of chillies and hot food, I never knew that this love is fake! I thought I loved my cuisine because it tastes absolutely delicious. I never knew that I just wanted to cause myself pain. Now I know that everything was a lie. I now know that I have destroyed my delicate taste bud that would otherwise enjoy great delicacies like kfc, mac & cheese and white chicken with salt along with other great ‘white’ delicacies! I bet this is the reason why I find everything bland after coming to the US and this is the reason I can taste and differentiate the artificial chemical smell, high sugar and syrup like smell, food coloring and smell of raw meat and frozen fish from those great frozen and organic US delicacies. It’s because my taste buds have been completely destroyed! This video has opened my eyes. Now I know that I am a masochist!

      Hello fellow Bangladeshi. I love my naga morich however you’re citing really bad examples of white cuisine. There’s no tastebuds destroyed, white people have their standard savoury dishes complemented with cheese and there are different seasonings that taste really good, like Sea Food with Old Bay, a well tender and juicy steak with sauce, a well made marinara sauce etc. Spiciness isn’t representative of flavour even if it can give it an extra dimension in many dishes but dishes have the potential to be flavourful without being spicy. Think about miso soup as well, and sushi. The umami from soy sauce (Japanese food doesn’t seem spicy from my experience, yet remains delicious). There’s a world of flavours out there.

    Being a mexican, I can only tell that food without chile (chili) is nothing! Or at least, it's not as delicious as we like it. Most chilis we consume are not that hot, just enhance the food's taste, so I guess that's why chili is so basic for us, we like flavourful food.

    • @nessax5136
      @nessax5136 Před 8 lety +3

      Being Cuban, I can tell you spice does NOT equal flavor. For us, it takes away the from the actual flavor of the food, since our food is super focused on what it's supposed to be. I guess it's cause of the difference in what grows on the island vs the mainland.
      It's hard living in Texas though when all your friends are Mexican and you can't handle spice 😫

      Spice isn't flavor, flavor is. Because to me. Spice is unneeded and I prefer some foods original rather then add flavor. Because Original is the best flavor. Thats why I like the food. Because I like the flavor and choose something a different flavor then original makes that food not that food.

    I would have to disagree with the last part of the video, growing up in Mexico it is a common understanding that you do build up an immunity to capsaicin, which I have noticed is not limited to the mouth. My wife who was born in California has complained of her mouth and fingers burning while she was cutting jalapeños and I have taken the exact chili she complained about burning her hands and rubbed it in my eye and felt no discomfort at all. I have in recent years stopped feeling much of anything burn that is below a habanero. Most of my friends who I grew up around have mentioned similar things. Also I have noticed that where the chili is grown and changing what type of chili capsaicin I eat often will give more or less of a heat reaction depending on my experience with that chili not the actual scoville rating.
