Ingredients
2 1/4 cups all-purpose flour 280g
1 Tablespoon granulated sugar
1 teaspoon salt
1 cup cold butter 226g
7-8 Tablespoons ice water or more, as needed
Instructions
00:00 Introduction
00:26 Whisk together flour, sugar, and salt in a large bowl.
00:45 Use a box grater to grate your butter into the flour mixture, briefly tossing the butter each time you’ve shredded about ½ stick so that it doesn’t clump together.
02:09 Once you’ve grated all of your butter, stir briefly with a wooden spoon so butter is not clumping together and all is coated in flour.
02:15 While stirring, slowly drizzle ice water into the flour/butter mixture. Add just enough ice water so that if you pinch the dough it will hold its shape and not fall apart. If the mixture is still dry and crumbly after you have added 8 Tablespoons, add additional water one tablespoon at a time. Take care to not overwork the dough or it will be tough.
03:35 Once the dough is clinging together when pinched, it will still be a bit shaggy. Transfer to a lightly floured surface and work the dough together with your palms to make dough cling together. Work (with your palm) into a 6x3” rectangle (it will almost look like a brick!).
04:20 Wrap dough thoroughly with plastic wrap and transfer to the refrigerator to chill for at least 30 minutes.
04:48 Once dough has chilled, remove from refrigerator and roll into an 8x12” rectangle.
05:13 Fold dough into thirds (like you are folding a letter, see photos in post or see video below for visual for each step), rotate 90 degrees, and then roll dough into an 8x12” rectangle again.
05:51 Fold into thirds again, and repeat this process of folding and rolling until you have done four turns of your dough.
06:45 Wrap dough well with plastic wrap and return to refrigerator to chill for at least another 30 minutes.
06:58 This makes the equivalent of two sheets of store bought puff pastry. To use, divide into two, roll into a ⅛” rectangle, and use as indicated in your recipe.
Notes
This puff pastry may be stored in the refrigerator for several days or it may be frozen (make sure to wrap it well) for several months and then thawed in the refrigerator before using

Thank you so much! I hope you love the cheese danish! :)
I just used this recipe to make some turnovers and they turned out great. I am so happy I don’t have to depend on the overpriced store bought sheets anymore. Thank you!
Yay! I’m so glad you enjoyed it! Homemade is always better if you ask me. 😊😊

Me too! One day I decided to conquer it and I have! I hope you’ll give it a try because I think you will be able to as well. 😊
@@SugarSpunRun I will absolutely give it a try now. With cooler weather setting in, I want a chicken pot pie. Now I have a crust for it!!
I’m so glad to have found this recipe, it was quick and easy! I was so excited to make this that I forgot to let the dough rest in the fridge 30 minutes after forming the dough together, I instead rolled it out, proceeded to fold it and kept doing 4 times before I realized it, oopsy!! I ended up putting it in the fridge after I shaped and folded the dough and i let it rest 1 hour before taking it out and rolling it out to make cherry turnovers and they were so perfect!! My husband kept saying how delicious they were, this puff pastry is a keeper!
I’m so glad you enjoyed it! 😊

Hi Sam- I like your method and let's keep cheating it's exciting and we're not going to get caught thank you so much you're the best! I'm making this as soon as I get some very good butter.
I hope you love it! :)
I don’t usually comment on videos but I had to comment on this one. This recipe is amazing! I don’t like being in the kitchen, but I’ve been spending too much money on cheese danishes from Starbucks and so I followed your recipe. The first time I made it I used store bought puff pastry because making it from scratch seemed impossible. The filling was amazing but the dough was meh. This time I followed this recipe for the puff pastry and let me tell you, oh my god it’s amazing! So easy to make, delicious to eat, and surprisingly fun! It was so satisfying to see the dough come together after the fold and roll. I now want to make puff pastry everything 😅 thanks for sharing this amazing recipe!
I'm so glad you enjoyed it so much! Homemade is always better if you ask me, plus you'll be saving yourself some money. It's a win-win! :)
Awesome recipe! I've made a traditional recipe before and it took forever.
This one is so quick and easy! 😊
I love this recipe and it did turn out well for me. I guess it's a good way to earn the turnovers by preparing this dough at home, since it is sort of involved for a lazy or procrastinating chef ! I recommend this recipe : )
I'm so glad you enjoyed it so much! There's nothing like homemade. :)
Nice! Really enjoy your videos.
Thank you so much!😊
Love your receipes
Thank you so much 😊
Would have loved to see it used in action!!! Thanks for the recipe!!
Check out my cheese danishes, they use this dough 🙂
@@SugarSpunRun thank you!
When I saw you grate the butter, I kinda wanted to do a prank (I have no clue why) and cut a block of cheese into the butter stick form, and put the wrapper around the cheese 😂
😂😂
Tasted really great!!!
I’m so glad you enjoyed them! 😊
Sugar Spun Run yeah! My whole family ate it all in 24 hours! 😂😋
That’s awesome!! 😊😊
HELLO!
Can you make and freeze the dough to use it days later?
plss ♥️
Yup there are instructions on how to do it if you go to the link. 😊
This is really want to know how to make it, let me try it and i will tell you next time i can do it or not
I hope you love it! :)
Once you’re ready to use the puff pastry, do you unfold it once you remove it from the refrigerator, or do you roll it out into another rectangle first?
You will want to roll it before using. :)
Thanks so much for the video. Thinking of trying to use it, making Ham & Swiss croissant. Go with the LORD God & be Blessed.
That sounds delicious! :)
Hi Sam! I'm thinkig of trying this recipe! Do you know what kind of butter you used? Normal butter or European butter?
Either works fine, but I like to use European butter if I have it on hand. :)
Is this pastry sweet, due to the sugar? I want to make this for savory Palmiers. Can I omit the sugar or is the amount negligible? Thank you so much for your thorough explanation and demonstration. It was hard to find one that explained everything in sequence.
It’s not sweet, it’s a small amount of sugar so it doesn’t make the pastry sweet but enhances the flavor. However you can definitely leave it out with no problem. Thank you for your kind comment!
@@SugarSpunRun Thank you!
Good Show the ingredients in writing also.
She does in the description.
What temperature should you set your oven at? And how long should you bake your pastries?
You should use it as indicated by whatever recipe you are following.
Can gluten free flour be used instead of wheat flour?
I honestly haven’t tried it so I can’t say for sure. If you do try it out I’d love to know how it goes. 😊
Hi! How many folds could you do? 5? 6?
You will fold the dough in thirds, roll it out, and fold again about 4 times 😊
Is the sugar absolutely necessary?🧐
You can leave it out if you'd like. :)
Will it rise?
It's a standard pastry dough so it will rise a little bit and create several flaky layers but it won't rise as much as a bread dough will. :)
Hellor
would it be okay if used whole wheat flour instead of all purpose flour?
I don’t recommend it. I’m sorry. 😔
Never seen such a messy work!My Hod, like child's work.!!
If you could kindly show us yours I’d love to compare. 😊
Maria, that was super rude.
How do you make any kind of dough or recipe without making a mess?
BTW, her video is spot on. Pfft...messy...smh.
Some people are never happy and they like to take it out on others on the internet. Not much you can do to help them. 🤷♀️
