- Chilli Cheese Hot Dogs

Ingredients
- 1 white onion, diced
- 2 jalapeños, diced
- 2 tbsp peanut oil
- 500g (1.1 lbs) beef mince
- salt and pepper, to taste
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- 2 tbsp tomato paste
- 1 tbsp Vegemite
- 500ml (17 fl oz) beef stock
- 1 tbsp hot honey
- 300g (10.5 oz) red Leicester cheese, grated
- 6 hot dogs
- 6 hot dog buns
Method
1. To make the chilli, start by heating the peanut oil in a large frying pan over high heat for 1-2 minutes. Add the beef mince and season well with salt and pepper. Flatten the mince to form an even layer in the pan to brown for 3-4 minutes. Then, add 3/4 of the diced onion and diced jalapeños, stir well. Next, add the spices, tomato paste, beef stock, and honey. Cook for 25 minutes on low heat, stirring often.
2. To cook the hot dogs, place them in a frying pan over medium-high heat. Once they start to colour slightly, pour around a quarter cup (60ml) of hot water into the pan and immediately cover with a lid to steam the hot dogs through.
3. Once the hot dogs are cooked, add your hot dog buns and about 2 tbsp of water to the pan to steam them, heating them all the way through.
4. To assemble, place a hot dog in each bun, top with chilli, grated cheese, and the remaining diced white onion.

I just visited Australia for my first time and brought Vegemite back to Mexico 🇲🇽. It adds flavors to many dishes and to simple toast with coffee in the mornings. Respect to all.

Where most foreigners go wrong when they first try Vegemite is they put WAAAAAAAAAAAAY to much on and that's why they hate it, it's only supposed to be a little bit, even better if it goes straight on after melted butter or margarine... YUM.

Yep, learned it from Chef Frank over on the Epicurious channel and it makes all the difference, though my box grater doesn't have a handle so I put into an loaf pan where it just barely fits.

@@AH-pu8iu it's a yeast extract. I has an extreme umami flavour and it's very salty. You are supposed to put a VERY small amount on toast, usually. Americans always put a spoonful and think it's gross. If you have a fingernail-sized scratching on some toast or bread with butter, it's delicious.

Its great in anything meaty, I always add some to my bolognese and chilli. There was a while where vegemite had different dishes it worked well in as their label to promote the idea.

I spent my summers as a kid in New England, and most of their Hot Dog Buns come sliced that way, from the top rather than the side. Easier to stack a few dogs in buns on a plate.

@@LyricsMom its yeast extract, on its own it tastes pretty strong and distinctive but when you mix it into a dish it just adds a good amount of salty and savoury/umami taste without and distinctive flavour

Top cut hotdog buns are found all over new England.
They also use them for lobster rolls. In Maine, the hotdogs are called red snappers. 😊
