  • Simple chicken fry:
    I made a simple chicken fry. I made this chicken fry between mild/medium. If you want to lower the spice cut down the ginger garlic paste, chili powder and garam masala. Ginger garlic paste is equal amounts of ginger and garlic processed in a food processor. It freezes well.
    Ingredients:
    1.25 pounds boneless chicken thighs cut into small pieces
    1/2 medium red onion chopped
    1/2 tbsp ginger garlic paste
    1/2 tbsp garam masala
    1/2 tbsp tsp salt
    2/3rd tsp turmeric
    2/3rd tsp chili powder
    2/3rd tsp Kashmiri chili powder
    1 tsp cumin seeds
    1/2 cup coriander leaves chopped
    2 tbsp olive oil
    Here is what I did:
    I took a cast iron skillet and put it on the stove on medium heat
    I added two tablespoons of olive oil
    I let the oil heat
    I added cumin seeds
    I let them sizzle
    I added chopped onions
    I let them brown a bit
    I added the chicken
    I added ginger garlic paste, salt, turmeric, chili powders, garam masala
    I mixed everything up
    I sautéed the chicken until the oil started separating from the chicken and started to sizzle
    I added cilantro on top and folded it in
    I turned the stove off
    I let the chicken cool a bit
    I took a plate and added some basmati rice
    I added chicken fry on top of basmati rice
    I garnished with a lemon wedge
    This was a nice meal
