Triple Chocolate Cookies

Preheat the oven to 350°
¼ cup date syrup
2 tablespoons unsweetened applesauce
2 tablespoons date sugar (or any dry sweetener)
3 tablespoons almond butter
1 tablespoon finely ground flax seeds
¼ cup cocoa powder
2 teaspoons corn starch
¼ teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon salt
½ cup whole wheat pastry flour
½ cup dark chocolate chips (dairy free-I used El Rey 73.5%) purchased here

½ cup chopped toasted walnuts
Dark Chocolate Glaze (Optional)
½ cup dark chocolate chips, melted or place a dark chocolate disk on top of cookies when they come out of the oven.
Mix the date syrup, applesauce, date sugar or dry sweetener, almond butter, and flax seeds.
In a separate bowl, mix the cocoa powder, cornstarch, flour, baking soda, baking powder, and salt with a whisk until well-combined. Mix the dry ingredients into the almond butter mixture and combine well. On a parchment lined baking sheet, place equal size balls of dough, approximately 16. Leave a couple inches between cookies and press down lightly on each cookie. You may need 2 baking sheets, depending on the size of your baking sheets.
Bake at 350° for 10 minutes. Immediately place a dark chocolate disk or a few dark chocolate chips on top. Once melted, spread lightly with an offset spatula.

Omit brown rice syrup. Just use date syrup
It lists date syrup and date sugar and that’s correct. The date syrup replaced the brown rice syrup. Thanks for watching!

I’m in the U.K. and I can’t get wholewheat pastry flour it doesn’t exist here - what could I use instead please?
An earlier comment asked if oat flour could replace the whole wheat pastry flour. Chef said yes. Hopefully you can get oat flour. If not, grinding up (blender or food processor) oatmeal should work.
