  • Hakka Salt-Baked Chicken is a traditional classic of chicken "baked" in coarse salt. Back when the modern oven was not available, the Hakkas would fry coarse salt and bury the chicken in the smoking hot salt to cook it. These days, this dish is hard to find in Singapore so when I see it on the menu, I make it a point to order it!

    I've seen sand ginger used for seasoning the chicken in other recipes, do you think that is necessary?

    • @sgpnoodles
      @sgpnoodles  Před 2 lety +1

      Sand ginger has a distinctive flavour that's unique to salt-baked chicken - you can add it if you can source it 🙂

      Thank you for your response. Instead of cooking the chicken in dry salt, are there any other ways to do it?

    • @sgpnoodles

      @@ironbutterfly12 nope, it has to be cooked in salt to be considered salt baked chicken!

      @@JMDepisodes depends on the brand but I would cut down on the time the chicken sits in the salt if you are using the seasoning!
