I wish we had street food like this in Canada. Anytime there is a food truck its like 20$ for a meal. in India you turn a corner and there is a little food stand, tea stand, cookie stand, it is so gosh darn cool !!!

Indian food as per my experience is just extremely expensive anywhere outside India. Europe, america and even in asia, outside of India, Indian food is atleast 3-4 times the price of what you get on the streets in India. And also not half as good. I fail to understand why that is.

Bro I don't know how you find these places, I'm amazed at your research. These are the typical everyday dishes of Delhi, and probably the north, that you don't hear too much about, especially the ram laddoo, the nankhatai, aloo kachori, etc. I'm glad you found these and enjoyed them! You've experienced delhi like a true local. If you weren't white I'd probably think you're from delhi. This is an amazing achievement in a city that has so much to offer. Keep at it!!

I don't know what was that liquid in 1st one but be assure that it's not animal fat everything veg only 🙏🏻
For eating kachori you can make hole in it using hand then fill up curry and eat you can mix it and eat too or you can eat it like chole bhature 🙏🏻
If you like crispy crunchy bottom part of samosa you can have papdi aalo or papdi chaat
For that flavoured milk you can call it kadhai milk , best part is that when it's heated for hours it changes its colour naturally then it's best you find that very rarely

The milk (item 22) was topped with cream, called malai. In US you get homogenised ilk which never gets cream. Here, if you boil milk and leave it for a while, you will see a thick layer of cream floating on the milk. The expression Creamy Layer comes from there. Cream is used to make Butter and Butter is heated to form Ghee.

That is fermented gluten rich flour or maida. The fluffyness of kulcha comes from leavening yeast. They come in packets like confectionary delivered to homes even..of course, deep fried for crispiness otherwise they are bland on their own unless basted in chickpea sauce. There is a place in mayapuri where they dip the kulcha into the chickpea sauce and deep fried with raw onions, green chillies and tomatoes almost like salsa without pureeing it. It's called bheega kulcha..bheega kulcha means wet as it is more mushy compared to what you had. The nan khatai are local home made cookies using the time box to hold hand made cookies and roasted using coals in winters.
