...and no latino or Mexican household is complete without this recipe. I loovvveeee caldo de res because I love beef and I love soups and this recipe combines the two perfectly. Heck it’s such a great comfort food I even love a steaming hot bowl in the summertime! In the air conditioned house of course hahaha.
It’s such an easy dish to make with a few core ingredients and when you cook it just right you are rewarded with an amazing eating experience. The ingredients we’re gonna use are:
INGREDIENTS:
2 Carrots
2 Calabazas
2 Zucchinis
2 Whole corns
2 Celery Stalks
⅓ Cabbage
2 Roma Tomatoes
2 Russet Potatoes
¼ c Tomato Sauce (optional)
3 Garlic Cloves
1 Medium Onion
4 Beef Shank Steaks
Soup Bones
2 tsp Comino
2 tbsp APC OG
We’ll start by simmering down our soup bones to get a great base of brother, then work our way by adding our beef shank, seasonings, and vegetables until it has become soup perfection.
Now here’s a few pro tips to get you going - you need to cook the shank bones to tenderness before you add other ingredients in order to extract the flavor of the meat, of the shank, and so the meat will be tender.
Also, you’re going to want to simmer it at a low to medium for the best results. Budget enough time, usually a couple of hours, to make sure it is cooked properly and NOT rushed.
And lastly, don’t start with way too much water. You can always add more when you need to, but it’s not a good idea to take water out once you’re rolling.
Now let’s make some CALDO DE RES!

Wow u went from the hottest place well real hot in the Rio Grande to Michigan where its snowing 6 ft there. That’s extreme But u can still cook the delicious meals there n enjoy it ,esp Caldo
In the Philippines we have the same called Nilaga. Very simple using the same vegetables but without the corn. The seasoning has two different styles. For the plain and easy is with Bay leaf, salt, Pepper, to taste, and cabbage and potato. The sour version is using the same vegetables or with Bak Choy or Chinese cabbage but with Tamarind soup base or the Tamarind pods called Sampaloc. I think the Spanish settlers from Mexico came to the Philippines and introduced the recipe. The Philippines didn't have cows or cattle before the Spanish colonizers brought them over from Spain and Mexico. The Carabao or water buffalo was used as a working animal to plow the rice fields. But I love cooking this boiled beef recipe. I think this was a very common recipe in all of Europe with boiled beef soup.😋😋😋😋😋
I would totally try that. It sounds delicious. I’m a little scared of that one you guys called caldereta though. The liver paste I hear you guys put in it throws me off. Saludos to our Filipino cousins. Some of us still remember.

The soup is one of My favorite soups! Pairing it with a good salsa is a must! My mom makes an oil based salsa with toasted dry chilies, and it's incredible!

My wife uses beef shank and neck bones in her soup ,but she always browns the beef before she adds the water. She is not Hispanic but loves to cook mexican meals for me. My family lives in Mission, Texas. I live up north In illinois. Love your Chennai!

I fell in love with this soup in Tracy, Ca. The grocery store, Mi Pueblo had a food court. They grilled chicken everyday. The smell brought me in and I could never get past the Caldo Res. I just got all the ingredients, they used chayote instead of zucchini, I’ll be making it soon! Love your energy!

Oh my goodness, this is EXACTLY how my Grandmother taught me how to make Caldo de Res!! I’m 65 years old now & EVER Mexican meal I make she taught me to make. She was from Mexico but moved to San Antonio in the early 1930s. I think that’s why you cook so much like she did. Thank you so much for all the memories.

Arnie you shared with us a salsa verde recipe that I really enjoy.. now I would like to share one of my favorites... a lb of jalapenos and lb of serranos. Place them in a colander in a dry cool place as little humidity as possible, let them age till they turn colors yellow,green,red, orange takes about 4 to 6 weeks(remember to rotate them once a day) believe me it's worth it. Then make your salsa 🔥🔥🔥🔥

I've had this dish with yellow crookneck squash also.
I've been looking for the perfect cauldo de res recipe (It's my absolute favorite!) But none of them were quite right to me- this one is spot on! I love it so much! Combined with the rice- I don't know if there is a better meal. It's sooooo good.
