CHAI MASALA POWDER RECIPE
Preparation time: 5 Minutes
Serves: 10-15
Ingredients
2 tbsps Fennel seeds, सौंफ
½ tbsp Dried ginger powder, सोंठ
½ inch Cinnamon stick, दालचीनी
½ small Nutmeg, जायफल
2-4 Cloves, लौंग
6-8 Black peppercorns, काली मिर्च
A pinch of Saffron, केसर
8-10 Green Cardamom pods, हरी इलायची
A pinch of Salt, नमक
Process
1. In a grinder jar, add fennel seeds, dried ginger powder, cinnamon stick, nutmeg, cloves, black peppercorns, a pinch of saffron, green cardamom pods and a pinch of salt.
2. Grind them into a fine powder.
3. Store it in an airtight container and use future for masala chai.

Hi Ranveer. Always great to know the backstory of a specific dish. But a minor correction. Robert Bruce discovered Tea in upper Assam now Nagaland which was already a popular drink among the indigenous tribes of Nagaland Assam. The culture of plantation was however was introduced after the discovery. A detailed description will be found in the "Chinatown Days" by R. Choudhury.

What I like about Ranveer Brar -ji is that he is an inclusive chef.
He involves and empowers people from around India. I like the way he goes round different t homes from different states of India. Many just go on a ego trip to tell the world why the state they are from is better than everyone else. I am so pleased that Ranveer-ji is the opposite. I like his Punjabi recipes the most but every state of India has a plethora of their own special food recipes.
