Pakistani CHAIWALA Teaches Me How to Make CHAI

  • A Pakistani chaiwala gave me a masterclass in how to make authentic Pakistani chai (milk tea). He's a Tea Master from Quetta in Balochistan and I think he makes the best chai in Pakistan! I ate at his Dhaba (roadside restaurant) every morning while I was in Islamabad.
    Chai master, Mr Karim Ullah, gives us his full recipe and tells us the secrets of creating the best chai. It's all about the ingredients and quality of the tea! He doesn't use store brought tea; he has his specially made. That's why it's so hard to recreate such an amazing chai at home.

    Ingredients
    - 1 mug of full cream milk (cheaper milk in the supermarket won’t cut it, you need to buy the most natural and unprocessed milk you can find. Ideally Buffalo milk if available.)
    - 2 tsp white sugar
    - 1.5 tsp black tea (ideally Tapal Danedar if you can find it! It’s not Pakistani chai if you’re not using Pakistani tea leaves.)
    Recipe
    1. Bring milk to nearly boiling. Stir so it doesn’t stick to the bottom of the pot.
    2. Add sugar. Stir while it’s dissolving.
    3. Add tea. Stir and let it boil up 3 or 4 times.
    4. Pour from a height through a strainer to get those creamy air bubbles on top.
    If you're looking for a good tea, try Tapal Danedar. It's got a strong taste, and it's what I use. It's impossible to get the exact same flavour tea as what you'll find at his cafe though, unfortunately.

    OMG LOVE LOVE LOVE! You have made the video that was quite literally on my list for 4 MONTHS. And this gentleman has such a soothing voice and wonderful way about him, what a chai guru for us all. ((total side note, but I was in Quetta 10 days ago and had planned to go to a local "hotel" dhaba style restaurant to do this -- Gobar Hotel was recommended to me -- but there were protests and sit-ins and I was stuck at the 5-star hotel in town. I asked and they kindly agreed to show me how to make chai but ... it wasn't the same, didn't taste even half as good as it does from a chaiwalla or amazing dhaba)). I'm definitely going to frequent this dhaba you uncovered when I move to Islamabad next month :-) GREAT VIDEO, gotta run ... need chai ;-) ;-)

      They usually buy local tea, not some brand (tapal,lipton etc) and they are much stronger in taste and aroma.. u can buy that from karachi empress market saddar

      In Pakistan we use Water Buffalo's milk and not cow's milk. Buffalo's milk has higher fat content and smoother creamer taste. Whereas cow's milk has a stronger gamey flavor and slightly yellowish color. May be the secret is in the milk and not so much in the type of tea leaves !!

      In Pakistan we don't drink masala tea. It's always simple tea with milk and maximum some people might put cardamom in it and that's it.

    Urdu is such a sweet language. Yes, it's similar to Hindi, but it's also different too in its vocabular, accent, and overall tone.

    I always wondered how they make tea at quetta. Because when you are living in Islamabad and wants tea, the first place come into your mind is Quetta Tea.
    And this Quetta singaporen cafe is my favorite spot for all time. Amazing tea , amazing staff. ❤️❤️❤️❤️
