    My mother, made this every Saturday night .. Italians called this “chicken in the oven” The grated Romano cheese is what made this dish. I remember dunking my bread in that garlicky olive oil. The potatoes were always so delicious..and the chicken was always juicy..👌🏻🤌🏻🇮🇹❤️ My mothers name was Giuseppina…this year is 20 years since she passed..so I probably ate this last about 20 years ago..🙏🏻 And she used a lot of olive oil in this dish too…so don’t feel bad about that..it was perfect 👍🏻

      Lol, I was 1/2 Italian and 1/2 French. Italian side: Chicken in the Oven, French side: Chicken in a Pot. My ancestors were not verbally creative but they were definitely great cooks!

      Giuseppina! What a lovely name. Giuseppina Strepponi was a famous opera singer who became the wife of the great Verdi. I think I'll make this dish while listening to La Traviata! Libiamo!!!

    Like Oscar, I am a first generation Italian. Born in Philadelphia with family in Yonkers. And to me, my mom was the best cook in the world. Unfortunately, everyone took her cooking for granted. No one learned her recipes. No one learned how to cook from her. Now that she is gone so are her meals. When I saw the beginning of this video I was in awe, "that's my mom's dish!" I thought to myself. Great job my man! I'm sure to make this one.

    I am 69 years old and made this for my family when I was 8, every week for dinner. My Italian immigrant parents called this dish 'depression food' which now I think they called almost every dish that! I love it and been making it all these years. Funny back then we always had the same dinners for each day of the week. Sunday was pasta and meatballs, Friday was fish, and Saturday this chicken dinner. I think Wednesday was meatloaf and potatoes. Sometimes when I want pasta, and not potatoes, I just make the chicken with a good amount of olive oil, lots and lots of garlic, and serve it over pasta. I am surprised, my dear friend, seeing the use of bottled black pepper............ciao. 🤔😉

    I'm first generation Italian blessed with a mom that was absolutely remarkable in the kitchen so my standards for Italian food are pretty much off the charts. Unfortunately I didn't pay much attention when I was a kid so have to seek out recipes that come close to what she used to do. Just FYI, you hit this one out of the park. My wife and two kids can be tough critics. I know something's a hit when they go back for 2nds and 3rds. Thanks!

    My mom taught me how to make this just by watching her(a family of GOOD Italian cooks). It's still a favorite for myself...or company.
    So flavorful...with a big salad and a glass of good wine. Thanks.

    I'm 62 and agree nowadays chicken can be flavourless. However, I can clearly remember the taste 50 years ago before they were pumped full of water and hormone and grown in 6 weeks. Worth paying extra for a more naturally raised bird. Lovely recipe which I'll be trying this week.

    Had to come back to this video after personally making this, to let everyone know this is probably 100x better than you think it will be. I was skeptical at first, not because of any doubt against you or the recipe, but because I typically never have luck with 'chicken and potatoes' recipes - they're usually pretty bland and dry for my taste. But, wow, this truly was amazing. I just ended up using larger red potatoes because I had to get rid of them, and it came out so great. Before broiling, I ended up basting the tops of the chicken since I had tons of that juice in the bottom, and they really browned up nice - couldn't recommend this enough if you're serving a larger-sized meal.

    My Italian parents made this but they would add wine, red or white, stir it, scrape the bottom etc. It took me until adulthood to realize how well fed I was as a child 😄

    This recipe is brilliant. So thankful to have found it. I had to modify it a bit due to there being only two of us and what was in the freezer. I cut a couple of chicken breasts into strips and basically halved everything else and followed the preparation directions to a tee. It was absolutely delicious and thank you so much for sharing!

    I Just clicked on this and was sent straight back to my aunts house in 1980's I forgot about this! She would make this when we would visit occasionally and it's perfect for feeding a group of people. Aunt Diane would throw some peas in at the end of cooking. We would have salad and bread and it feed a bunch of us.For anyone looking for an easy yummy meal this is is. Thanks for reminding me of it. Im going to make a smaller batch for two. However it would make great leftovers if your open to that.

    Made this tonight for the kids and wife. The potatoes are even more ridiculous than the chicken. I omitted my usual spicy heat to follow your recipe and it turn out great. Another meal to change up the usual here.
    The parsley was the only questionable item. Since I’ve never cut veggies. I wasn’t sure if you trimmed off the stems. It appeared as though you did. So I did as well.
    Thanks a lot for sharing it. Onto the next one.

    I am NY Italian and this is how we always made chicken and potatoes and it is delicious. The only thing I do differently is mixing everything in the pan with the chicken and potatoes instead of in a mixing bowl. Thank you. This is going to be tomorrow’s dinner. 👍

    Nice dish! Brings back memories! Years ago my wife and I went to visit my parents. My mother asked us if we wanted something to eat. She said she made "Chicken And Potatoes In The Oven!" We had some. When we left my parents house we stopped at my wife's parents house and my mother in law asked us if we wanted something to eat. I asked her what she was making and she said "Chicken And Potatoes In The Oven"! My wife and I looked at each other and laughed! We had it twice that night! 😁

    Well I saw this today so I made a modified version for two with 2 chicken leg quarters. Didn't have parsely or Parm. I like Montreal steak seasoning so I may add some pecorino when done, don't want to over salt. Smells great, it's in the oven and the timer is calling me. You know that oil herb mix you made would be great on pizza. It reminded me of a local cooking show, she was Lebanese, and used green zaatar and olive oil as a paste to put on I think pita bread. I put it on pizza and baked it. Awesome. Thanks for the recipe.

      The chick & spuds w/ onions was great! I probably used too much oil but the spuds & onion didn't stick and were awesome. I put it under the broiler for 5 mins but took out at 3 when I smelled the "char". Chick was perfect. Used my mom's old Wearever shallow roasting pan that's older than me. Burned my lip on it as a little kid trying to smell the awesome pizzas she made in it. 😶Never did that again! Thanks S&F, great food!

    Hi - I have watched and enjoyed a number of your recipes. I am astounded at the way you seasoned the chicken and potatoes - a very simple but wonderful method that has never ocurred to me before. I consider myself quite an adventerous cook but I never thought of your method for some reason. I love chicken and potatoes and they go so well together (in fact I have some in the oven now) but will have to wait until next time to try the method you showed. Thanks very much!!!     If you store your onions in the frig and they are therefore cold when you go to chop, it will not burn your eyes. Love your channel!!!

    Love the recipe. If you run the two halves of onion under running water or soak for a minute or two, your eyes will not tear. South African tip.

    I worked in the meat department of Pantry Pride food market in Rockaway Beach while attending high school....I was taught how to cut up a whole chicken and I can tell you ......you are a pro just like me.
    The butchers I worked with were eager to show me their skills and I paid attention.

    I know this is an older video but I’ve made quite a few of your recipes for myself and my mom. This one’s in the oven as I re watch this video waiting. It smells amazing. One change is I used natures seasoning because my little brother broke my salt grinder lol. I hope it’s as delicious as yours looks!

    Watching you prepare this dish was like watching my mother when I was a child. Hands on cooking. None of this fancy shmantsy stuff. She cooked for eight of us, I was the baby and I was lucky enough to get my hands in. That’s something you never forget no matter how many years go by. I’m way over retirement age and I still cook like my mother. By the way, I am Italian!!!

    Making this tonight! My favorite part of cooking is the ingredient prep. Just finished chopping onion, garlic (I used a bit more than 6 cloves 😏) and parsley. My mouth waters every time I watch this video. Can't wait to eat this!

    Love this recipe. My step dad from Italy learned it from his mom and made it all the time. Only thing he did differently was bake the whole chicken in and then cut it into pieces, rather than cutting it into pieces first.

    OMG is this GOOD or what?? I made it tonight with chicken thighs and it came out GREAT! The smell of the roasting garlic was so good and the finished dish was delicious! I love it!

    I learned how to break down chickens from my mom as a kid. I don't think I have done it once in the 40 years since I moved out on my own!!!

    I got a wild hair one day and tried a dish very similar to this seasoned with parsley, sage, rosemary and thyme. I called it Mrs. Robinson chicken. Loved it.

    Just a tip. # 1-You should never use the sharp side of a knife to swipe things off your cutting board. It dulls the knife,and cuts into the cutting board (which winds up in your food). Something my grand mother thought me ages ago.
    Also tip #2-always place your knifes upside down IF you have wood block holders. Pretty much the same reason,it dulls the knifes faster & cuts into the wood block.

    Great video. I dry brine my chicken on a cooling rack sprinkled with smoked salt for a few hours in the fridge. Come out nice and dry ready for the next step of seasoning. Looking forward to trying this out. Thanks!

      I'm sure it will be even better. Whenever I remember I dry brine my chicken pieces.

    I have a whole chicken on my counter. Was planning on roasting it whole but omg this looks phenomenal. I know it will be so much more flavorful. Also, my grandmother would slap me silly if ever I were to purchase a chicken already cut up. It's not a difficult task to break down a whole chicken and the result is a much more flavorful, juicy end product. Can't wait to serve this to my family this evening!
