  • Today we're making Chicken Vesuvio. This delicious chicken and potatoes dish was created in Chicago and isn't too well known in other parts of America. It has roasted potatoes, seared chicken, and lots of garlic in a tasty white wine lemon butter sauce with peas. I hope you enjoy it!

I agree. The only pricey things Jim uses are the oil & cheeses. Those two things have to be good or the meal doesn't taste the same. Everything else is either already in our kitchens or is easy & cheap to find.

@@dee_dee_place I'd add panchetta and guanciale to that list, but apoart from that, I agree. I mean that's the thing, you don't need fancy ingredients if you know some basic cooking tricks. Like in this video: Get a good sea on the meatr, use the oven to concentrate flavor, melt some cold butter into sauces to make them thick and glossy. It's as easy as that.

This was one of the best meals I have ever tasted in my life! Even though I'm not a big fan of oregano I followed the recipe directions. None of the flavors overpowered any of the other flavors they just all meshed together. What a meal! Thanks for sharing and I'm so glad to be part of your CZcams channel 👏🎉

I just the way he present his dishes, and his son testing the food is a family cooking. I love it , Congratulations , I will be trying this dish also , cause I cook a lot of chicken . the flavor is the one I would try, not all the same condiments I am used to .

I have to say you are raising a gentleman for sure. It's nice to see in these times. I like how you cook without measuring. That is fun for sure. I always learn something. Thank you. Neal

Great recipe, thanks for sharing. I made this today, only substituting peas & carrots for the peas. It's delicious and will be in my recipe rotation from now on. Thanks again!

Put a kitchen towel on a HOT handle. I fire people on the spot in my kitchen if they forget to do that. Someone can get seriously burned if they don't know the handle is hot. Good rule for the home cooks as well. Keep the kids and other family members safe.

Jim:"This is not a health channel."
Me: "Yes, but it is a good food channel." 😁

I disagree when you say it's not a health channel! First, there's a thing called operation. A delicious recipe with cream, butter, pasta and fried meat might not be a good nightly choice, but enjoying it once in a while isn't going to make your arteries collapse. Your dishes are primarily made with fresh ingredients, little to no processed food with preservatives and chemicals. And I find many of your recipes can be lightened up a bit by playing around with some ingredient substitutions.

Sorry LOL I hate autocorrect! There is a thing called moderation, NOT operation!

I love that you give a great rundown of ingredients in the beginning and the x/10 for the temp on the stove. I'm a new subscriber but I've been watching your older videos first and overall editing has been improving (seemed a little rushed in this video, but still high quality.) All finished up with the peas and that sauce, this dish looks so good! Good job!
