Trader Joe's has sliced Kalamata olives and Feta with Mediterranean herbs. I added some finely chopped bell pepper and zuchinni to the recipe...delish!!

You can use rice vinegar, balsamic vinegar or apple cider vinegar. By the way, when they make red wine vinegar, the alcohol is converted into acetic acid which gives it its acidic taste, so you don't have to worry about it being alcoholic if that is your concern.
Why did you take the seeds out of the cucumber? You can also add green pepper, avocado and instead of feta you can use cottage cheese. I eat quinoa this way at least once a week.

Unfortunately, he forgot to give us titanium teeth with which to chew up the olive seeds, so it appears that the god you are relying on to force everyone to eat cucumber seeds (even if they give them indigestion) is not infallible and therefore not really God. Alternative belief: God put seeds in cucumbers ( and olives and avocados and even people) as a means for them to reproduce themselves. Taking out those cucumber seeds was cucumber abortion. Other than that ungodly act ( for which Coit will end up in hell), this looks like a very tasty recipe.

Noone may want to eat them because they have other things they can eat. But think about long ago, when food was hard for people to come by. And if some kind of catastrophe happened, we would be grateful for them again. Seeds of all kinds are loaded with nutrition.

Clean food is good. I made tabbouleh with quinoa the other day. It tasted good and light.
I use a “Grapefruit Spoon” to remove the seeds from my cucumbers, it works like a charm!

Quinoa is much better if you cook it in a broth like chicken or vegetable broth. I hate flavorless grains.
I did not have any red wine vinegar at hand, so I had to use balsamic but it was delicious. Thank you for the recipe.
