In the Air Force, we had these wonderful Latino women run the 24/7 kitchen. They took pride in making omelettes that laid waste to every restaurant off base! Anything you wanted and done in moments. Many lonely nights were forgotten quickly when these talented ladies whipped up an everything omelette. Btw, an Italian omelette with dry salami, pepperoni, mushrooms sautéed with oregano and garlic, tomatoes, onions, and fontina cheese would be epic!
That does sound great. Ill keep that in mind
Memories of “midnight chow”. Runny everything omelette! That ladle had to hold 3 eggs. In the 70’s we still had airmen doing the cooking. I was on BAS so I think I paid $1 maybe $2…
Best omelet I ever had was at Fort Leonard Wood during basic training in 1990. The lady cooking the omelets would say, "if you want a omelet step back out the way". Over half the people with trays would step back.
@@DTG_LOCKETT oh boy, I like that one!!! I honestly don't think these wizards of the griddle omelettes know how great of a meal they make? I grew up in a pretty poor family so an omelette was like prime rib to me. Those ladies would ask me if I wanted this or that and I would just stare at her like she was handing me gold coins. Thanks for your service brother!
@@RealPeterGunn I grew up poor too so the only omelets I'd ever seen were on TV. I thought it was something only rich people ate. Thanks for your service too
So you were a Navy cook!!! The cooks of the Armed Services do the most amazing work on land and see to see that our troops are well fed and ready. I have watched a number of youtube videos showing the cooks operating on ships and land to get the food out from WWII onward!
Yeah me too...its erie similar...i get sucked in the rabbit holes for them no doubt
Decent cook here. Bought a Blackstone to cook mostly Asian foods for the missus. Got some egg massacre with a sticky top, but man... The folded omellete technique is blowing my mind! I've been making ghetto half folds for 15 years. Thanks!
Great demo. Thanks! 😀
Interesting technique! Looking forward to giving it a try!
Nice job! Looks good!
Finally someone who actually knows how to make a omlette the right way. Explained it perfect, I've been a breakfast cook for 7 years and everyone's omlettes look ugly af. Yours look just like mine lol on point! Nice to see some other skill out there.
Welcome to the omelette club....funny some guy blasted me on how in 40 years this has to be the worst omelette he has ever seen...i needed to flip because the eggs are raw....and that NO one ever fold that way..i just made it up...hahahahaha cant make this up
@@TheFlatTopKing Lol yeah that guy does not know, at that time the egg will be all dried up. He's probably one of those guys that just flip it half a circle. Your omelette are perfect like mine and you fold yours like mine, and with the spatulas you can make gentle creases in omelette as it makes it easier to roll/fold.
Soooo good. I will do that this weekend. Thanks
Love to see your version of an Italian omelette, basil pesto everything... yes
AF vet here. That omelette is just as I so fondly remember eating at so many midnight chow sessions with such great friends.
Love seeing your experience come through. 3k people lined up, your explanation of the browning butter. Such a subtle, yet amazing experience you're sharing with your audience. Great work, please keep sharing!
hey thanks for your Service Brother...I did my A school in Lackland...
Thank you for your service sir
I love all you AF Vets , talkin about classy chow halls. Much love brothers, I was in the Infantry, Army. Funny chow hall story, first time I ever ate lobster was in Afghanistan! ha! Yeah, at the DFAC on Camp Phoenix in Kabul. I mean, it was KBR, so, it is what it is....But hey, it was about the best food you could get for a few thousand miles. Anyway, much love AF brothers, maybe I flew in your planes. I flew in a ton of C-17's and C-130's. Great times in the GWOT! Damn, anyway, stay salty brothers, enjoy your chow.
I have watched every egg video on YT....this is the best.
Another great video on flattop cooking! I love your videos, and have learned a bunch from them! Thanks A lot!!

Well thank you Wally.
Awesome omelet - makes me miss my days on the USS Haze Gray & Underway. Go Navy. I bet you've only made several tens of thousands of those. I like the way you put a bit extra on top. Thanks for the video.
That would be correct. Tens on thousands. Go Navy.

That is awesome!
Gonna make my first omelette this weekend, gonna use your video as a guide!
Awesome....keep temps low around 300 and add butter you will be good
one of my favorite omelets from a restaurant many many years ago called a Pizza omelet. Sausage, unions, mushrooms green peppers, mozz cheese and on top I meaty marinara sauce.
Sounds great!
Thanks Shipmate, been cooking omelettes in the pan for years and now my griddle is the place. I miss my morning omelette with fresh bread. I always worked night shift and the breakfast and wav s made me sleep like a baby.
You are so welcome
You are Awesome!!! Reminds me of the omelets I used to get at Andersen AFB Guam at midnight. I am a USAF Veteran and was there from 4/80-10/81.These looks the same and amazing. This is the best omelet video I have ever watched. I never folded the ends first. Now I know how to make the perfect omelet. Thanks for sharing and explaining the video so great.
Thanks Billy. Thanks for your service. Go Navy.
Love this demo! Thank you for simplifying the process. I do not eat bread, so I use my dinner leftovers in my next day lunch omelet - the Italian omelet is an all time fav!
Awesome
Coming off a bad flu and I haven't had much desire to eat this past week, but seeing all the good eating here has made me want good food again
Hey thats a good thing...hope the recovery is a speedy one...
Thank you for this video. Breakfast on my new griddle will happen over the next few days. The chicken stir fry was superb.
Awesome
Learning a lot from you my friend. Keep on griddling and keep on videoing...I just got my flat top...got it seasoned and gonna get started today...I hope
Sounds great! Reach out if you need help...always available at some point
Thank you for your service to our Country! And, thanks for your videos. I am NOT a griddle expert, so am glad you keep things simple for me. Gotta “dumb it down” for me for sure. 😊
hahhah FIrst thanks for the kind words...Im sure you got this....you get better with time
Awesome video and great tips Neal! I’m thinking about a pizza omelette, cheese, pepperoni, mushrooms, peppers, onions with some pizza sauce on top….yummy! Hope y’all had a wonderful Christmas! Wishing you and your family a blessed New Years! Cheers y’all!
Sounds great! That was more of my thinking. I have had so many comments that I might have to make 2 videos.
Nothing wrong with that! Happy New Year's to you and your family!
Great Video!!! Diving through your channel looking for all the tips, tricks and ideas. I just put together my Cuisinart 360 and made some killer smash burgers last night!!! Coolest thing ever cooking with this on the deck!!!
they thats awesome....keep it rolling
This video brought back fond memories of standing in the mess line to get that early morning omelet at sea. Thanks for sharing!
Glad you enjoyed it...thanks for your service....
Well done, nice tips
Glad you like them!
🤙🏻💚💯Thank you for the video and tips.
Btw thank you for your service! ⚓
Well thank you...appreciate that
Thanks for the easy instructions on how to fold over an omelet the easiest. I just did it on my Blackstone and it was the best omelet we've made.
Hey thats so cool...thanks Rich...it really holds all the ingredients in...easy to do and makes for a killer presentation
You’re the man - thanks for all the tips, good sir 👍🏻
Happy to help!
Awesome
this man is such a good cook.
Nice shirt! I appreciate your omelet advice. It shows how good you are at making them.
Thanks so much Gerard
Your comment about how your flat top runs down hill made me remember MS's making multiple omelettes in bad weather on tincans. I haven't quite gotten it done right on dry land, yet.
hahaahhhaaha man those were the days....even cleaning the galley we would wait for the water to shift from side to side to get the water in the drain holes..haahahhaha
So far.....I am thrilled by your prep!! I just enjoy everyone else’s ways.....that they do!! You keep on......keeping on.....with your videos! Please do!! Ahna USA
Thank you! Will do!
I just recently started watch your channel but I saw the Italian omelet before this one and they both look great.
TY ALAN...Yeah that Italian Omelette was really good.
Sounds like a great keto friendly recipe for the family!
Yes sir. Got to balance my days with good and bads
My favorite to make is the chile verde omelette. YUMMM!
sounds great
Nice tutorial, especially the part about the temp being low enough to cook without browning the egg and ruining the omelette.
Here's one version of Italianesque; use ricotta (drained) and prosciutto on the inside and topped with a drizzle of pesto (try parsley and almond instead of basil and pine nut) on top with a sprinkle of crispy prosciutto strips (you'll love the crunch). Might even convert Amy.
Hell ya Bob. Thats what im talking about
Nice! Maybe a Balsamic drizzle as well?
Great advice on being able to fit everything in and fold it! I probably would have messed that up if I tried
Glad it was helpful!...if your interested in the video we mentioned the Italian Omelette and have created it since this has posted
Flat Top King, I watched your omelet video and cooked omelets for Mother's day for the PHF. I only had one to get a little brown out of numerous. Talking about public service- you the man.
Hey thats awesome...really appreciate it...
I found it! I’m going to try this, I’ve never been successful with omelets in a pan, this seems easier to manage. An Italian omelet sounds good to me 😊
Awesome...i have that one as well..turned out amazing
I would try a Italian omlet in a heartbeat..
Looks delicious
Thank you
Very nice vid. Love the idea of Italian, some nice cured meats and irregular cheeses. When broke, I used to make spaghetti omelets (crispy up some un-sauced cooked noodles, American cheese or velveeta, and 3-4 eggs).
Explain that some more.
Sure. Pre-cooked noodles on a griddle and sauteed in butter until getting slightly crisped up. Take half of the 3-4 beaten eggs and pour over to start. Add cheese a minute or 2 later, then pour the rest of the egg on top. Flip after a bit and cook until you get the egg color or consistency you like. Great with salsa if you have any, but great plain too.
@@bradcampbell624 man am i out the game. So crispy spaghetti noodles with eggs over top. Flipped then topped with cheese. I have never…. But don’t sound half bad.
Oh yeah. And when broke, is a belly warmer and filling for literally a buck or 2. And the kids love it, because it's different and has american "cheese". That, and they love the name "spaghetti" even if there is no sauce.
@@bradcampbell624 great idea.
Thanks gonna make me one as soon as I get to work today
You brought a memory back of my time in the Navy- while waiting for A-School class to start, everyone was a mess cook. I was stationed at Millington and it was a huge base, I think about 15k personnel total. We learned (quickly) to have two eggs in each hand to crack and I remember that it went like this- 2 eggs per bowl, 24 bowls on a tray, and 16 trays on a rack. Eggs, eggs, eggs, eggs, and then more frickin eggs. I almost danced my way into my first actual class! I'll add that is was 12-14 hour days too.
Hahahaahh you ain’t lying. Thanks for your service Shipmate
An Italian omelette does sound mighty bomb! Haven't tried that before but definitely sounds worthwhile.
Well keep watching..its coming up in the videos..hahahaha
I enjoyed your omelette tutorial. I just ordered a new outdoor griddle and your pointers! About the Italian omelette. In the early 90's I went Perkins House of Pancakes and they had an Italian omelette. Fro what I remember, it had salami, ham, diced tomatoes, mozzarella cheese and was topped with sour cream. It was one of the best omelette I've had and they no longer offer this omelette.
That sounds great. I have made the Italian omelette since then. Look for it and let me know what u think.
Sucess, first breakfast of omelettes on the griddle for the family is done, thanks to Doc Griddle. My daughter came up to the farm to enjoy it. The key was your suggestion of shutting down one burner, rotating burners, it was the key to controlling the temperatures. The butter indicator was a solid trend to good griddle temp. I give myself a B+. thanks a bunch. Your pancakes with the muffin mix combo has been requested. I also used the Little Griddle on the weber gas grill to cook the bacon and sausage links. That worked great. Had to keep them separate for the alpha-gal girls. Again, many thanks!!
Well sounds like your moving along nicely...Job well done....I love all the options these things can provide
Great video. Keep it up my dude. Meal prep
TY
Thanks for the tips I just got a 36 Blackstone
Awesome to hear. Welcome to the family.
This video was great man I really enjoyed it “if your brand new to the flat top community” 😂😂😂😂😂😂 that statement killed me 😂😂😂😂
Great job!
As an Air Force vet from way back, I've tried to re-create the omelettes you guys prepared for us - but they always ended up scrambled in the end! Grrrrr!
I thought I could reproduce them in a large stainless steel skillet, but no-go. I have a non-stick small griddle too, but I'm hesitant to use steel spatulas on the surface. I'm going to see what I can find for a steel flat-top. I see now how important the spatula size is now, so I'll be picking one up asap.
Can't wait to try it again!
Thanks, Bud!!!
Thanks for your service bud...since this one has been made I have made the Italian Omelette as well...just have fun and play around with it
hello i work at a restaurant currently called north italia and we have an Italian brunch omelette. its has stracchino cheese prosciutto, and asparagus. We also do a scrambled with roasted brussels sprout, asparagus, piquillo pepper, spinach, cipollini onions.
Geeze...that thing seems like a perfect thought of omelette...spot on...
Fantastic looking omelettes! New sub from me! Looking forward to more flat toppin!
Awesome! Thank you for subbing, reach out if we can help
Terrific omlettes 👑
Thanks Robert. I cant wait to make the Italian style i haven’t forget hahha
Good looking omelette!
Thank you 😋.
Yes on the Italian omelette… Here’s what I do. We have a meat lovers pizza the night before, I take the leftovers from the fridge and scrape off from the crust all the marinara, meat and cheese and make my omelette from that. Outstanding! Highly recommend it…
awsome idea. Looks like ill try two versions. Stay tuned
A common MilCook method I didn't see you use was to first load a cup/small bowl with all fillings the person wants; That way there is no delay grabbing items when the egg is ready. Brings back old memories from long ago!
Absolutely thats kinda how we did it in the navy....good point..ty
Italian omelette sounds really good.
since this video as aired we have made it...look up how to make an Italian omelette
Awesome video,
Italian style,
I do onions and peppers sautéed in garlic butter
Prosciutto and I add mozzarella and bruschetta
Sounds great! I ended up making the italian style omelette after all...check it out
Nice color on those eggs. AND 4 eggs are even better plus some chiles toreados, more cheese sour cream and toasted buttered white bread. Yummy.
Sounds great!

Italian sounds great
I have made a video about it...look it up. How to make an Italian Omelette
Neil,, that was , in my opinion one of your better video's you made those omelettes like a PRO ! Great job my friend. Years back when I was able to hike a lot better, my friends and myself went hikeing in the mountains in montana for 3 days we did a lot of fishing at about 5 am. Every day. Cought lots of trout we cooked them first then deboned them and added them to our omelettes , I thought it would be terrable but it was delicious ! Thank you for the memories Neil this video was great . FRANK from montana...
Every time you comment its like a short story and i look forward to them. Its like extra from the book you sent me. I trout fish as well. Might make a video with them.
@@TheFlatTopKing Good afternoon Neil , I hope you mean what you said to me , if you look at the first fish recipe in the book I sent you the story. ( short version ) of the egg and fish is there . hope you don't say o no he sent another comment ! LoL I love watching your video's they are good , can't go out when I watched you video it was 12 degrees below zero here in montana. Well take care .for now. Frank from montana.. PS being as old as I am 67 I have done a lot of stuff, that explains all the stories......
I am totally down with an Italian omelet. Bring it on.
Thanks Beth....We have already created it and posted it check it out..
In the past I use to put everything in my omelettes then I had a really good one when I was out at a fancy cafe and now I cant eat the old style. I cook omelettes quite often and I just use 3 eggs, mozzarella, then lightly topped with oregano and basil with olive oil drizzled over the top. Some fresh chopped tomato is also a good addition to this style omelette. Salts and pepper is a must.
good ideas bud..
When I was stationed at NAS North Island (USS Kitty Hawk) there was a little restaurant in Coronado that made chili omelettes. Very good
Not to be dumb on my part but are we talking about literally Chili poured over a omelette . Sounds both great and bad. I think the next time i make chili I will save some and try it. Thanks
@@TheFlatTopKing Chili was in the omelette and was very tasty
Good video.
TY
Done very much like the omelettes we got for MIDRATS at NATC Meridian, MS. Nice.
Absolutely....I loved cooking midrats deployed...I was in the Chief's Mess or Wardroom because I would prep dinner serve dinner and cook breakfast...plus it was all at night and was less busy....I always volunteered for night shift underway...the Midrats I was allowed to get creative...so thats where I had fun
@@TheFlatTopKing I wasn't an MS, but I spent plenty of time a a junior AK mess cranking. A couple weeks in the galley at sea gave me new respect for the guys cooking for all of us. That's hard work and you don't get much recognition for it. People always gave the MS guys grief, saying it was an easy job anyone could do, but it's not, not at all.
Totally in for the the Italian omelette 🙂
Well good news...we ended up making it...check it out...good for sure
I like to add a hot or mild salsa to the eggs before wisking, 2 tablespoons, makes the omelette redish but adds alot of flavor.
The Italian omelette that you described sounds great. Maybe a drizzle of sauce on the plated omelette.
We actually created it...check it out...Italian Omelette on the griddle
I'm lactose intolerant and for eggs I replace my cheese with pepperoni. Your Italian idea is pretty much my norm.
Awesome,,,thanks for sharing
