Mini Lunch Box Cakes

- The recipe for mini lunch box cakes (8cm diameter x 3 cakes)
The sponge cake sheet (40 x 25cm pan size)
3 large eggs
75g sugar
1 tsp honey
1 tsp vanilla extract
a pinch of salt
75g cake flour
25g butter
25g milk
Cream cheese filling
250g cream cheese
50g sugar (because the non dairy topping I use is sweetened so I cut sugar, if you use heavy cream, add 80g sugar instead)
200g sweetened non dairy whip topping (it is more stable than heavy whipped cream for cake decorating; You can also use heavy cream but the cream will be softer)
Sugar syrup
1 sugar : 3 water
Food coloring: red, blue, yellow

For the people who use cups as their measurements, here's the ingredients for that.
3 Large Eggs
⅓cup sugar
1tsp honey
1tsp vanilla extract
A pinch (⅛tsp) of salt
½ cup cake flour
⅓cup butter
⅓cup milk
1cup + 1tbsp (8 ounces) of Cream cheese
¼cup sugar
⅞ (7 ounces) of sweetened non-dairy whip topping
Then 1part sugar, 3 parts water
Red, blue, and yellow food dye.
You can buy cake flour online commonly or in grocery stores, baking stores, that kind of thing. You can also make your own cake flour.
Whip topping is also called Chantilly cream, thickened cream, whip cream, vegetable cream, cool whip, ect. You can buy it in a lot of chain grocery stores, or even make it yourself.

this is literally the best recipe video ive ever seen, so neatly executed, no unnecessary chatter, just the strangely soothing sounds of ingredients being blended, added or the simple sounds of the vessels being used it was totally informative but strangely calming to watch i wish wed get to see more such beautifully, tidily executed cooking related videos im very very impressed

I have this exact same recipe when I make my raspberry roll with cream cheese! It’s so good! Nice presentation!
Nondairy whipped topping mixed with cream cheese, sugar and vanilla or lemon is a no bake cheesecake filling. Put it into a cookie crust, chill, then serve with strawberry or other fresh fruit on top. Quick and good, have made this since the 1970s. Ideal when the weather is too hot to use the oven.
Does it need anything to become firm? Or the frigde will do that?

@@bbrenesg I keep my cheesecakes in the freezer so they stay firm, just take it out 10-20 min before serving :)) No gelatine sheets since they don’t have it in stores in my town

I didn't make a lunch box I made it big instead and it was amazing. I totally recommend using this cake recipe. The Cake was soft and moist

Made this today and it looked ok but tasted good. I think I really struggled on the cream stabilizing. I used Silk’s non-dairy whipping cream but it got to soft peaks but not thick enough like in the tutorial. The cake is definitely on the sweeter side. My fiance enjoyed it for our 2000 days! Will definitely try this recipe again once I find a better non-dairy whipped topping. If you have any recs that worked for you, please lmk! :)

I messed up the first time so here's the mistakes I made and tips so you don't mess up and waste ingredients like I did D:
DON'T OVERMIX WHEN ADDING THE FLOUR PLEAASE
this is the main reason it didn't work out the first time :( literally fold until it's JUST mixed and you can't see flour anymore
heat up the water to put the egg mixture on BEFORE adding everything together!!
it speeds things up!!
also, preheat your oven at this stage as well cuz letting the cake batter sit for too long can also mess things up im pretty sure :/

Fantastic! I would add a layer of fruit jelly inside: passion fruit or lemon for the yellow, blueberry or blackberry for the blue and raspberry for the pink. As an acidic contrast in flavour. 🙏
