RENOVATING A RUIN: Cosy Christmas in Tuscany, Baking Cookies & Our Traditional Wood-Fired Oven Ep35

- Thank you for watching this cosy Christmas episode. This week I start making a homemade garland using things I've found in the woods, I baked traditional Swedish ginger cookies from an old book belonging to Guido's grandmother, we had a BBQ of salsiccia and homegrown vegetables outside and baked focaccia and bread with our neighbours in an old-fashioned wood-fired oven.
SWEDISH PEPPARKAKOR CHRISTMAS COOKIES RECIPE:
My recipe makes about 50 small cookies. Mix 3 and 1/3 cups flour with 1/2 teaspoon bicarbonate soda. In a pan or pot, gently heat 220g butter, 1/2 cup honey, 150g white sugar, 1 cup brown sugar, 1/2 teaspoon pepper, 1 teaspoon ground nutmeg, 1 teaspoon salt, 2 teaspoons ground cinnamon, 4 tablespoons ground ginger, 2 tablespoons fresh grated ginger, 2 teaspoons ground cloves, juice of half orange and 2 teaspoons vanilla extract until the sugar has dissolved. Leave to cool until caramel is warm, not hot, and then beat in two eggs. Pour caramel into flour and mix until combined. Refrigerate for two hours or overnight. Preheat oven to 180degrees C. Roll cookie dough into small balls and press down with fingertips to make flat discs. Cook for 12-15 minutes for a crisp cookie or 7-10 minutes for a fudgey cookie. Remember they will firm up a lot once cooled so best to take them out earlier rather than later to be safe. Enjoy dipped in tea, espresso or Vin Santo.

Kylie, I love these types of videos. I’d be happy to watch days in your lives (and at home) as long as you’re comfortable doing them. I think you’ve said your parents don’t want to be in videos but I do hope you’re getting lots of footage of them with their grandbaby. That will be priceless footage the farther away from now you get. And of course lots of photos. It’s all we have in the end besides our memories. And many even lose that. OH Kylie....I'm totally IN LOVE with this episode! I am an absolute lover of Christmas but especially all the culture and festivities (old style) that surround it. Not the modern commercialism but the cooking, decorating with nature and strong family traditions. This made me so warm and fuzzy inside! I'll miss not being in our warm and cosy little Tuscan home this Christmas as I'm back in Australia with family and have work commitments, so this has transported me back there in my mind. Thank you for doing this charming video! And thank you for the recipe for the Pepparkakor! You are very lucky to have a neighbor who can teach you to use your wood burning oven. I used to work in a restoration museum demonstrating baking and cooking on a wood burning stove. I found it really easy to get used to - regulating the temperature is much faster on a wood burning stove, all you do is move the pot to a warmer or cooler place on the stove top! Get yourself a small thermometer that you can put in the oven (they used to have those that were designed to hang off a rack) and practice putting your hand inside the oven while checking the temperature on the thermometer. It won't take long before you'll know what it feels like at all the temperatures you typically use - bread, cookies, cakes and casserole baking (medium), drying fruit, keeping leftovers warm (low) and the initial part of roasting, searing (high). The only part that may be unexpected, depending on your oven, is that you may need to turn whatever you're baking 180 degrees, once, in the middle of the baking cycle. This is because some wood burning stoves are hotter on one side than the other, due to the location of the fire in the design. But once you learn how your stove behaves, it's really easier than you think. Once the hubbub of Christmas is over, give it a try - it's really fun!

i never comment on anything on the internet, but i wanted to say how excited i was when i realized that you were making pepparkakor! my grandparents are swedish and my grandmother was born and raised in sweden, so the swedish christmas traditions are plentiful in my house around christmas time! she passed away this year, so this will be our first christmas without her but we're making sure to keep the traditions alive. i always get excited when i find people who have swedish cultural heritage since it's very rare for me, and i make sure to spread it with all my friends like you've done with your viewers!! merry christmas!!

I grew up with Swedish sweets, lefse and lutifisk on Christmas. My grandparents were Swedish and Norwegian. I still make my grandmorhers (Norwegian pepperkake) and few of the other traditional holiday sweets.

Beautiful episode, surrounded by beauty and love. The story of your spiced ginger cookies took me to my grandmas days which was when the Portuguese controlled Goa, their main interest was the export of spices cloves, cardomom, cinnamon and pepper from Goa to Europe, which brought the bland cookies to life!!!!

Such a wonderful time here in Iceland, dark, beautiful and full of Christmas lights and we bake and meet together. The first Santa comes tonight from the mountains and the children put their shoe in the window and get something good in it. Our Santas are 13 and one comes every night and the last one on Christmas Day. So this is very exciting. Have a nice Advent time and thank you for your all your shows which are so beautiful.
