You can get/be so creative.
You gotta a no-stick pot, peppers, the fruit of your choice and your fav Herbs! Go, Baby, go!
Just remember to slowly simmer for at least :30 and use a good blender.

Pecan really add a roundness to hot sauce. Really good recipe ! I made it on Traeger and it is awesome. Will try today a blend of pecan mesquite and hickory for fun to try today the jalapeño’s recipe and can’t wait to doit.

Seeings how a little piece of your heart and soul goes into perfecting your batches.
If you've got a dehydrator, a good option is to dehydrate what was strained off from the cayenne sauce and grind it up as a spice blend.

It all looks great! Smoking the cayenne looks especially delicious! I have one thing though I saw that bugged me. The pot you were using shows it was teflon coated that someone had used metal utensils on and scraped off the teflon. I've heard that stuff is toxic! A suggestion to you is get a better pan without teflon. The shrink wrap idea is great! Nice job. Would make great gifts!

I don't do hot sauce but my husband loves hot sauce (he is from India) and this actually looked so nice! I very well may make some and surprise him with home made hot sauce. Although trying to hide that smell will be impossible.

Although the dog may be panting from the spiciness. When my husband cooks, we cannot stay in the house because it is like a gas bomb went off 😆 everyone is coughing, eyes red and lots of tears...burns like hell. But he just stands in the kitchen and cooks his food...no problem at all. I don't know how he does it.
You can always coat your fingers first with oil or vinegar to as a barrier to the heat.

If you don't have a pH tester they are cheap on Amazon. I didn't have one at the time of this video and I stored these in the fridge or recommended them to be stored that way. In another hot sauce video I actually waterbath can some for a long shelf life!

I store the Jalapeno in the refrigerator due to lower vinager content. The cayenne should be good to go on the shelf for a while. The bottles come with the black shrink wrap. Check the description for the link (Amazon).

Thanks! I posted a couple links in the description that may have better measurements. I will say the vinager/water content is personal preference on how thin or thick you want the sauce. Just add a little at a time until you reach your desired consistency.

Thanks buddy from South Africa, would be a bit expensive to order a bottle of your source but will try and do the same here, do you think it will enhance the flavor if you ferment the cayenne peppers after they were smoked?
I'd recommend fermenting and adding smoked peppers at the end. The smoking process is antimicrobial and doesn't lend to fermentation well.

Hi Man, just wanted to know, what's the difference if you hadn't strain the cayenne sauce? Just bottled all up like the jalapeño sauce, is it because a more liquid texture you wanted or something else? Is it hotter if you don't strain it or nah?
Not hotter just a texture thing. Cayenne has a lot more seeds to deal with, but that doesn't bother some folks.

Great video! I recently started making my own hot sauce but am having trouble locating peppers other than the standard offered at the local grocery store. Was wondering if there is a place you get your peppers from that aren't available locally?
I know there are hot sauce groups on Facebook where people sell different varieties of peppers. I grow as much as I can myself.
I just gave in and bought some fresh Fresnos off Amazon. Twas expensive but it will serve as a giftt for all my family members this next year so to me it was worth it. Making some hot sauce

@@virginiagraceliving excuse me for picking your brain, I was planning on cold smoking the peppers before sealing them in a brine for a month or so, my question is do you think the smoke will affect the fermentation at all or should I smoke them after the fermentation?
@birdistheword1327 I think it could affect fermentation. Another option would be fermentation for the majority of your peppers and smoke a portion fresh and add at the end.
What ratio of water to vinegar are you using and what’s the ph level the ratio?
I didnt ph test and recommend refrigeration. They very well could be shelf stable but without testing I just store in the fridge. All of those bottles went out to friends and family and were used way before they could go bad.

I’m going to try both but being a garlic junkie I don’t think you put enough. If there is such a thing as enough garlic
Add as much as you like!
I make a screaming jalapeno paste for eating with rice and sausages, hot links preferably. My kids like to put it on sandwiches, spread it on like mayonnaise almost. And you can use it in other dishes like I mix it with some scrambled eggs the other day. Fried rice, yum! It's made out of cut up jalapenos fried and blistered in a little sesame oil to the point where this almost burned. (Peppers must change color. Red jalapeno is more eye appealing) I add some fish sauce (tablespoon or so) to it to give it a little Asian flair after its fried a few minutes, the fish sauce will concentrate as it cooks out. Keep it dry as best as you can. Then I take it and I blend it with some lots of fresh garlic (depending on the amount of peppers) and salt and make a paste out of it. It will last in the refrigerator for a week or two but it's not something that you can really can without putting some type of preservative in it so you really need to use it right away and eat it it's so good.

About what temp do you smoke the peppers @ ?
As low as you possibly can. I used a smoke tube that doesn't produce much heat.
I use a masterbuilt electric smoker with a cold smoker attachment so I can probably smoke close to whatever outside ambient temp is. Thanks for the quick reply. Do you sell your sauces?
