They have to test run each individual console, fix bugs for each individual console, and THEN they will release it. It will take however long it takes in "Cherry time".
I don't think people really understand how long it takes to make games. I myself do game development as a hobby and I can confitm it takes really long, and often if you implement one feature multiple others break that you need to fix, and it also needs to be balanced really well.

My bet is that in the midst of their release plans Unity fiasco (installation fee) happened at the final quarter of the 2023, and maybe they decided to switch the game engine. It would make sense since they are one of the most influential indie game studios, and any fee gray area would have a huge impact on their revenues. So porting a game to a different game engine is big of a task in itself, and then porting a game to all of the different platforms from a different game engine is a different kind of beast.

I personally think that silksong won’t be that much larger in scope but much more complex mechanically. The crests all alter hornets attacks, the tools we have seen are much more complicated than any the charms, and also like you mentioned in the video the ports are difficult as well. I believe this is why it is taking a long time because there is more to bug test.
when making a game bugfixing can often take ages so I wouldn't be surprised if it was the case that when TC set the previous release date they had already added all the content per se and thought that the bugs will take them that much time to sort out. ps. not only bugfixing takes a long time but it's often totally unknown if you solve a problem in an hour or a month and it's amplified by the size of the game pps. also getting rid of the bugs in a game all about bugs has to be super hard
I could easily imagine that the game is so large that bug fixing and streamlining takes significantly longer than it did for Hollow Knight. Even if the game didn't have '150 new enemies' and a larger map, it still has more systems in place that would complicate things. Hollow Knight had movement, nail arts, spells, and charms. Silksong has a quest system, tools, whatever it is you equip tools too, more movement, more attacks, a more complicated 'soul' system, etc. And they have to make all that work together.
If silksong is being made in the same way hollow knight was, by which I mean expanding outward from the main story, giving them as much time as possible would give us more and more stuff to explore.
