I find it best to hold the arti upside down by the stem and smash it down on my cutting board. This will
Open the leaves up a bit to get the seasoning down in there and any stuff will come out before cooking:

8 minutes AFTER it comes under pressure which could take 10-20 minutes. Plan on at least 20 to 25 minutes from beginning to end.

I don’t bother cutting the thorns off. I love them with mayonnaise too! Every time I tell people that they think I’m weird haha
I used large California artichokes and had to cook them for 12 minutes, natural release of 5 minutes.

So excited. 7 min to go for our fav artichokes. We always use Mayo too. Thank you. It so nice to see the same insta pot style. I have 3 huge that don’t fit. So I cut one in half as an experiment. Hope I don’t ruin. Will edit it again when done. 8 min for two jumbo and cut in half jumbo cooked the halves but not the jumbos. Lesson learned. Next time putting only 2 jumbos. I set the steam time for an additional 5 minutes and then release. As soon as the release is done I can check for cooked not cooked or over cooked. Done. But sometimes you can get some tough arties. These are on the tough side. Thank you again

I prep them the same way except i wash them after cutting the thorns off. Spread the leaves lightly apart while rinsing them.
After adding the water, add one to two bay leafs and cook.
Using clarified butter ( real salted butter) inatead of mayo reduces the saturated fat.
    Enjoy.

my son followed a recipe where he scooped the choke out. While it was easier to eat it was super mushy, following directions mind you, and i really believe that hairy stuff adds to the flavor. Because those artichokes were lacking. don't get me wrong, we ate em and loved em but i'm back here following your directions because i know where i got good advice.

I saw a show on TV that showed how to cook artichokes. Then I became obsessed with them. (Doesn't take much to tempt me when it comes to food!) Next trip to the store I bought a couple even not having any clue what they taste like.
Unfortunately, I drew a blank at home and didn't remember any part of the cleaning, prepping, and cooking. As you can probably guess, it was a disaster. I did use my Instant Pot but think I overcooked them. Did I mention I was clueless and trying to wing it?Plus, those thorny leaves were very unfriendly.
Somehow, I had a strong craving for artichokes again the moment I saw your video title. I appreciate your simple instructions that I will watch over and over. I have a feeling I will meet with success following your tips.

  • @raymondjayjohnson693

Just my take but the stems are very tasty especially when steamed then roasted. I cut just enough off the farm cut end. Sometime after I'm done I pull all the stems for a mushroom / artichoke sauté. Crunchy bits on salad that is a great bread / bacon substitute.
Also just me but cutting the ends of the leaves is just presentation only good for folks who are just now trying whole artichokes. Steaming tends to take the edge off already. Folks used to artichokes will just tease you about it. ;-)
Finally yeah I strongly encourage folks to use a paring knife to pull out the spiny flower in the middle. They can taste good but still get stuck in the throat for folks who don't know to peel them out anyway. It's a bad sensation fore newbies.
And yes, fermented mayo always!! Love the video thank you.

Oh well if you want them then you must pay whatever the going rate is...
