Eggs in the Hole With Hash Browns

  • In this week's episode, I create a fun rendition of one of my favorite classics, egg in the hole. Or whatever you call it. I've heard it called egg with a hat, egg in a basket, egg in a frame, or gasshouse egg...So many names for such a simple dish!
    In this rendition the "frame" or "basket" is a hash...made with potatoes, white onion, pickled serrano peppers, and bacon lardons. Made in a cast iron pan over some open fire. Don't let the fire scare you away, you could make this just as easily in the comfort of your kitchen...I just love being outdoors and cooking on an open fire.

    Question, why not put salt onto the potatoes before straining ? Wouldn't that help draw out more water ?

      Sean Leafgreen, great question. You probably could add salt before straining to help pull out moisture but I feel like potatoes are so hardy that the effort is lost because the impact is so minimal. I like to add it after so I know exactly how much salt is in the potatoes and hasn’t been diluted and squeezed out with the water. Just my two cents, I’m sure both ways would turn out.     Cooked a whole hog for the 4th of July on a modified open fire/charcoal smoker I made for the occasion. Would love to see your take on pulled pork and baked beans, open fire or not.

      Andrew Crawford that sounds delicious and like a lot of fun! Thanks for sharing. I love pulled pork and baked beans. I will give them both some thought. In the meantime, I did release an open fire chili episode which is like a distant cousin to the baked beans if your interested....thanks for the support!
