As a Filipino, I have been WAITING for you to react to our version of Carbonara. Every Filipino thinks Carbonara is made this way so when I told them that Italian Carbonara, the original Carbonara, has no cream--my family was shocked and even asked me if I read the recipe wrong😂😂

If you are not a Filipino, you will be surprised that as of now, they are making a standardization of the Original Adobo recipe which I believe is absurd since it can be prepared in different ways but still call it the same dish. 😆

The flavour of the food needs no more. Pasta with eggs, pepper and parmagiano reggiano is enough. Enjoy the simplicity. The pureness. I finally start to get Italian food now. Guanciale is also good.

As a Filipino, I was waiting for the day that Italians discover our version of "carbonara." I think this is just some substitute carbonara recipe that dates back to the 1950s and just became popular here. A lot of people here haven't really encountered the real deal tbh. We Filipinos just call it carbonara, but by no means do we think of it as a traditional Italian recipe, just wanted to let you guys know : D

As a Filipino here in Manila, I do Carbonara the traditional way. If I can't find Guanciale, I make it and patiently cure it for six weeks. I always keep stock of Pecorino Romano.
Hi kabayan, I'm curious on what's the best curing method you have for someone who doesn't have room for dry ageing or a dry ageing fridge? I tried a dry brine but it tasted bad on 14 days.

@@SiniBANG hello. Dry curing inside regular fridge will do. Make sure the meat is hanging or is on a rack. In the brining stage, you place the dry brined meat inside a ziploc bag and the liquids from the meat will dissolve the dry brine after seven days.

Real Italian spaghetti and carbonara is actually quite plain once you tasted other versions from other countries. Imagine an Indian version of spaghetti and carbonara...There will be at least 20 spices on it 😋 Yum
I have. Didn't like it. I'm so used to our version that the sour spaghetti they have didn't taste good to me. Their pizza is way better than ours though.

@@crimsonking1133 as somebody who has tasted different carbonara variants from various places and only two years ago tried traditional Italian carbonara... just my personal preference but the traditional italian is still my favourite, never tasted plain to me at all. If anything, it was pretty rich and eating it for lunch on a day where I skipped morning coffee would leave me asleep for the rest of the day. So plain? No but rich? Definite yes.
I'm a Filipino and I've always thought that this is how Carbonara tastes like and I didn't like it because it's so creamy and heavy. But then I found out about how Italians actually make their Carbonaras. After that, I never ate a Filipino style Carbonara ever again 🤣🤣

Carbonara is a pasta with white sauce made of either milk and cheese, but i don't see anything wrong if i made a F*cking Carbonara with a Ham or Chicken which i have eaten last New Year's Eve.

We really should stop calling it "carbonara". Carbonara does not have cream! Its a freaking Alfredo! Filipinos gets so triggered when foreigners bastardize our food but we don't care when WE bastardized theirs.
That's the point, creamy Carbonara is way better than the " authentic " Carbonara by Italians who were always purists on their food.

Itlog po ang gamit nila at pecorino cheese made by goat's milk, the parmesan is made by cow's milk. Yan ang pinagkaiba po nyan. walang creamer talaga yang original Carbonara. Sahog nyan ay pork lang parang tidbits bacon, walang chicken po.
Friend of mine who went to Italy years ago came back with a bunch of recipes. My favorite was carbonara. And I followed the recipe to the letter until, well I memorized it.

Fried rice doesn’t just belong to Asia tho. There are thousands of recipes for fried rice and rice in general. If they say Asian style fried rice then sure get upset. But if they just say fried rice, honey that doesn’t just belong to Asians.

My apologies, as a Filipino. When "Carbonara" is said here, it's usually the American bastardisation of carbonara that is usually meant. Legitimate ingredients such as Pecorino can cost a premium here, assuming you can find one at a specialty store.

What we think of as "Carbonara" is an Alfredo. So in this case, Chicken Alfredo.

Filipino Carbonara tastes good too but it is different from authentic carbonara. I've only eaten authentic carbonara once, and it was very delicious.
