- Apple Fritters. OMG Apple Fritters. Just the thought of them elicits a mouth-watering frenzy. Is it crisp and yeasty? Is it craggy? Is it appley and cinnamony? Sweet but not TOO sweet? In this time of social distancing where does one get such perfection? We hope you can get one curbside from your favorite local donut shop, but if not take this homemade apple fritter recipe for a spin. Yes, apple fritters are fried (why do you think they taste so good?), but if you're a little timid around boiling hot oil, we'll show you how to bake them too for more of a danish texture.

FOR THE FRITTER,
This batch size MAKES 6 LARGE fritters- If you want to bake instead of fry , I recommend proofing for 40 minutes after shaping and baking with egg wash at 425 for 15 -18 minutes depending on the desired color. Glaze as you would donut. It's very tasty almost like coffee cake or a danish.
275g or 1 3/4C. AP FLOUR
5g or 1 TSP YEAST
70g or 1/2C. MILK
1 EGG
35g or 2 TBPS SUGAR
5g or 1/2 TSP SALT
60g or 5 TBPS BUTTER
1 QT or 4 cups neutral high smoke point cooking oil.
1. In a medium stainless mixing bowl combine the dry ingredients, mix to combine, and then cut in butter, tearing into small pcs to help distribute.
2. Add in milk and egg an using a spoon, stir to combine
3. Once a cohesive mass has been formed, turn out onto work surface and knead until well combined, shiny and no butter chunks are visible. Don't be afraid to add a little more flour if your dough seems wetter than you'd like.
4. Put in covered container in warm place for 2 hours.
5. Proceed with instructions from video to finish
FOR THE APPLE FILLING
250g or 2-3 APPLES (Granny Smith or Honeycrisp)

Getting up to 100K real soon!!
I am so glad to see someone who absolutely loves apple fritters as much as I do. They have really not gotten as much attention and praise as they have deserved throughout the years
"A proper handmade, yeast-fermented apple fritter is among the best things a human can put in their mouth. Period." Truer words were never spoken.
I had my first apple fritter experience as a child. There were always donuts in the adult classrooms at the church and my grandmother, being a grandmother, would share a pre-church treat with me now and again. I had avoided the fritter thinking, it has apples and NO chocolate glaze it can't be better than the others. My grandmother noticed my reluctant behavior and convinced me to try just one bite. She broke off a craggy edge crusted with glaze and handed it to me. In that moment, even standing in a church as I had many times before, I had never come so close to actual heaven as I did savoring that bite. Nothing has held a candle to the apple fritter since. Sadly, I am no longer able to consume any dairy at all. And so, it has been a very long time since I have enjoyed a little piece of heaven. Yours is, by far, the best how-to I have found on the subject. I think I am going to attempt this with vegan butter substitute and oat milk. Fingers crossed!
Thanks for sharing, that should work just fine. Coconut oil would suffice as well. Thanks for the kind words I hope these deliver for you.
Okay first off cute story but 2nd l absolutely love your writing style. Do you write books? Because I could littoral see this as I read it that's how amazing this little pice is. And I love the way you described how you felt after tasting it. Amazing!!
You can use water instead of milk in the icing.
you could just use water and lard or shortening in place of the butter
Wow this is one beautiful story
I want to try making these in the oven. You didnât show the oven method with the last two fritters! Time for a new video đđ€
Apple fritters are my hubbyâs favorite! Love your channel! đ
I actually appreciate you putting on the text the metric mesauring and the amount of spoonage. Most youtube videos if not all do not do that, Thank you.
Literally, LITERALLY!!! The BEST Apple Fritter I've ever eaten! Well worth the time and effort.
Thank you!
Awesome thanks so much for trying
I know Brian recommended honeycrisp or Granny Smith but I happen to have about 30 pounds of Fuji apples right now that need to be used up. This recipe is it! Iâve never made apple fritters before - Iâve never even eaten one before but everyone loved these! I made 12 baby fritters instead of 6 large ones and def let them get really brown and crispy. đ
I have been on the East Coast since 2003 and STILL have not found an apple fritter like my WEST COAST DONUT SHOPS made! I can't wait to try this recipe!
Oh wow! Looks incredibly delish & delightful good!
Have to try! Thanks
I can see why this channel has blown up. Love the style and that looks delicious! đ€€
Brian!!!! You always have the answers I am looking for. đ
Omgggg thank youuuuuu!! Perfect! Yes! THAT'S how it's done! â€
Great explanation on the how to, including the Pro Tips, awesome. Making these now,
Thanks, these came out amazing!! I'm encouraged to try more kinds of donuts now.
Thanks Brian for the recipe. Something that I want to try
That is the same video I watched years ago and have been looking for a recipe for those fritters. Thank you for this video , itâs a game changer.
So thank you I love this recipe well let's be honest youâre recipes are the bomb!!
Love love love apple fritters. crispy-er the better. yum. Thanks for sharing.
We had a great donut shop near our home growing up and they made awesome apple fritters (of course my brothers called them Big Nasties) and I always thought they were made with yeasted dough. But most of the recipes I've seen on CZcams are for a baking powder batter. This looks exactly like what I've been seeking!! Thanks for posting!
I made these fritters a couple days ago, and they were so good, I made them again today. I usually pretty much stick with chocolate desserts - but these fritters are outstanding! You proved to me your recipes are good and I will try some of your other items! Thanks!
Dude! Made these last night! AMAZING!!
I can't wait to try this recipe!!
Those look really good. I like the chopping technique you showed. Honeycrisp are great for baking. Definitely have to try this recipe. They are the only pastries my husband likes.
I made these and they were fabulous! The frittering technique is spot on. I baked mine. I just don't like to fry things in my house. I double glazed with generous amount of icing. So so good. Will make again for guests as a special desert.
This is the first video of your that Iâve seen and I thoroughly enjoyed it and Iâll definitely be sharing it. I think Apple fritters are amazing and after looking at several different recipes, Iâll be making yours. Thanks a mill
i absolutely love your style with your videos. Fritters are my number one fav in the donut world (why else would i be watching and commenting on a fritter vid....). I'm sold on this, just need to get things together now. Oh, thanks for the pro tips on which apples and the hidden salt, those little things are what pushes good to great!
My father owned 3 donut shops and I myself was a baker for several donut shops. The chopping the apples in is the best way you are right. Most donut shops use pie filling for the apples you can use cherry pie filling or pretty much any other pie filling for various flavors. The Cherry ones are delicious.
4:00 AM: Time to make the doughnuts! Lol The cherry oneâs really sound good, we have an Amish store about a half hour away and they sell homemade sour cherry pie filling that is like 90 percent cherries and is unbelievably good. I think Iâll go grab a couple containers of cherry pie filling and see how that works out. Thanks for the tip!
Thanks, dude! Amazing detailed explanation! And a great way of presenting! Well done! And thanks for doing it so well! Needed this recipe in my life
Just made these. Iâm freakin blown away. Theyâre INCREDIBLE. Iâve tried many times to make a good apple pie, but the dough was always the problem. I was worried this time, having never made fritters. But this dough is amazing, and the fritters as a whole turned out better than Iâd imagined. I used some apples from an orchard nearby and added some ground cloves and nutmeg to them, too.đđđ Highly recommend!! Thanks, Bri!
Just made these tonight. Can I just say DUDE! Thanks Bri! Love Bry
Apple Fritters are my jam. These look phenomenal.
This recipe looks wicked, can't wait to try it.
Beautiful! And look, it has actual apples in it!
Cannot wait to try this one- another great video!
Apple fritter guy for years. Great job. Dark coffee, fritter 7 AM with the sport section, Classic.
OMG these are crazy delicious !!!!
I love apple frittersđand I have been trying different recipes, Iâm going to try yours next
Iâm binging your channel! Love your content!
my favorite dessert item omg ty
Made these today, they are wonderful. Probably used too much apple but it all worked out, also needed about twice the amount of glaze. Will definitely make again in smaller sizes. Great recipe, thanks---
I just made these and Iâm letting them cool! So excited! They look amazing đ€€
I hope they deliver thanks for making
My all time favorite donut. Like the almost dicing method of the dough, I have to imagine it also helps to create those crispy edges that are so loved in a fritter. Great job!!
Thanks, Paul!
Mine too...but most donut shops...well they ain't it. They're usually a greasy mess. I need these in my life.
Thank you Brian for this fantastic recipe... had a few apples kicking around and made it today... we all loved it.
My twelve year old had a fritter for the first time and heâs hooked.. perfect with a triple espresso on a very cold afternoon here in Toronto.... cheers!đšđŠđšđŠđ·đșđšđŠđšđŠ
We deep fry every year. Our Christmas wafflettes are a family favorite. They are made with shaped irons dipped into a pancake like batter and deep fried until crispy. At Christmas we use the tree, snowflake, and butterfly (angel) irons. While they are hot from the oil they are dusted with powdered sugar.
I've gotta do apple fritters this year. I've got three trees with an abundance of apples to do something with and I do love fritters. We will be making apple butter, sauce, pies, and most likely fry some apple donuts too.
I've been cruising apple fritter recipes and found yours. This one is the winner...I cook enough to know how something is 'apt' to turn out and your trick with the fast grid cut and re-bond is perfect (along with ALL the rest!) Can't wait to make these and thank you! Happy to subscribe and recommend.
wow! THANK YOU for the subscribe and any future recommendations and welcome to the channel. if you have requests or ideas for future videos, i'm always taking suggestions.
Brian, I made these today!! SUCH an easy dough - way better than store-bought apple bits! The only thing I changed was to add a little orange juice and orange zest in the glaze - oh baby! They are SO good!! Thanks for making me feel like I could and then showing me how I CAN!! =]
Iâm gonna have to try this
Just made my first frit with this recipe nice vid and keep up the great work
Can't resist apples đ I try it.well doneđ
Just made these!!! They are really good!!!
Glad! Thanks Jim

Absolute Top...must agree!!..i have tried more recipies..the others were from the consistense more likely MC apple pie..but this 1 is really Donuts Apple Style.!! Whole Family Loves them...Thank You Sir for Share this Recipe..Greetings from Ăsterreich
Pumpkin fritters are great too
I was always into chocolate and then I met an apple fritter. It's the best food on Earth. Thanks for the recipe and tips.
BEST fritter EVER! Finally made a dairy free version and it worked amazingly! I used oat milk and vegan butter. Fried in canola oil. Adding this to my personal recipe book. Thank you again!!!
Bubaloo426 thanks very much for giving this recipe a shot. And for the nice comment.
Great video! Thanks đ
You just got another subscriber! You are way cool and your attention to detail is right up my alley DOOD! You totally made my night with a good laugh with your personality and I needed it in this fooked up world! Who doesnât love a craggy fritter though?!
Thanks for that sub!
Hey Bri!
Just made these today and they were delicious!! But blew apart during frying.
I used 250g of diced apple and it seemed like maybe there was just too much apple for the dough to hold onto?
Maybe I sauteed my apples too long and that drew out too much of their moisture? (I used granny smiths)
As soon as I chopped the roll I could feel that it was wet and might not stick bsck together well (I did add the extras flour you recommend)
I'll try again with a little less apple next time!
Oh my god i made these fritters today and they were better than the shops! SO GOOD the whole family loved them and at them all in one sitting. If youre wondering if htese are actually good and if you should make them, rest assured, i 1000% recommend
I remember seeing that old video of a commercial baker making the dough and shaping it like a cinnamon roll, then chopping it on angles both ways. Your way is the bast way to make apple fritters. And it is the way I'd make them when I find the time to do so. There's one donut shop in Coldwater, Michigan named the Dutch Uncle that has the best apple fritter donuts I've ever had in all my travels. I'll bring a dozen home anytime I pass thru there. Sweet, hard, craggy, cinnamon and apple flavor...just a perfect donut to be found. THUMBS UP!!!
Thank you!!
Dude love this! Also the submarine alarm đš sound for dark coffee đđđ Little goofy things like that make these videos đ„đ„đ„đ„
Just made this recipe!! Very good dough flavor and light texture. The glaze could use a little less salt but overall very good. Bravo!!!
Thanks for giving them a try and thanks for the comment!
Very nice, thanks!
Thanks very much for watching!
Looks amazing. Believe it or not 711 has pretty good Apple Fritters in the morning when they're fresh.
Looking forward to making this.....
Nice. Let me know how it turns out if you do!
My family owned a chain of donuts shops in the 80âs. Apple fritters are my favorite donut and the most difficult to make well.
I did it and itâs amazing.
Thanks for trying
Did the oil temp work out well? I always felt it could have been 5-10 degrees cooler than he said in the video.
I'm totally going to try these. Fritters are by far my favorite pastry. I'll have to try to make a low-sodium version, tho. I've got white bread-machine bread working pretty well now, ready to start oven baking from bread-machine dough. Any tips on reducing sodium in baking? Also... what's your opinion on rice bran oil for deep frying?
Looks very tastyđ
Fritters are everything.
SALT YER DESSERT DERD! đ Excited to try this recipe this weekend. Great channel btw!
Thank you
My suuuuper dark grandpa coffee is Hills Bros. Dark Satin. It's fantastic, reasonably priced, and is available almost anywhere. Great video...I can't wait to give this a try on a cold November morning.
Bri, love your content. Have kids. Love food. Thank you.
Tomorrowâs challenge. Have to have this in my mouth
Did not expect this method, looks legit
Thanks DR
Tis the season and I want an apple fritter. This apple fritter.
I've learned a few years back, that when you put a pinch of salt in any pastry or cake, is considered a binder or for balance
Hey Brian! Huge fan of your videos. can you share some other apple recipes like cobbler / pie / cake? couldn't seem to find any that I trust. Thanks !
I used your method to make pineapple fritters, it worked fine.
Iâm an old southern woman who cooks. I love your channel and Iâm going to make apple frittersâŠ
My fav fritters used to be Market Pantry at Target, until the quality took a dive. They were fried to a rich goldeny brown, with bits of al dente apple mixed into the cinnamony yeast dough and a milky white crust of glaze. Each piece was a one huge fat and sugar bomb but soooo good and worth it. Oh, how I miss them. đą
The best fritter Iâve ever had was a blackberry fritter made daily at this little coffee stand inside the maritime center in Port Huron, MI. Iâm going to use this as a base recipe and swap out the apples for blackberries đ
Hi! I just found your channel and subscribed! I can't wait to try these!!
Linda Leonhardt let me know how they turn out. Thanks for the comment and thanks so much for watching the vid.
Ps the next video is apple cider donut. Thatâll be out Thursday so you might want to check it out.
@@BrianLagerstrom Hi! Thank you so much for letting me know, I'll be watching!!
I absolutely love your Channel!! I recently started making bagels. Any tips?
BAHAHAHAHA fant-awesome! You said strong, folgers or Maxwell house suuuuuper dark! Got my heart! I looovvve apple fritters. I'm definitely trying this!
Yo I wanted to thank you for never using oxidated high heat high pressure rancid oils! You get it man. Subbed. This fritter is god-tier. Gonna make it soon.
Thanks for watching! I try and avoid the industrial seed oils as much as possible. Iâve used in a few videos, but I usually donât eat that stuff
I feel like I don't understand this comment enough and I want to. Do you mind expanding on what you mean and why it is important?
@@sd.2528 Industrial vegetable oils that have been subjected to high heat and high pressure (e.g. most cooking vegetable oils like canola, peanut, soybean, etc...) are usually rancid by the time they hit shelves and introduce a number of health problems when ingested. Most notably, cellular inflammation due to your body using damaged fatty acids to repair cellular tissue, and a very skewed omega 6 to omega 3 fatty acid ratio, which further oxidizes the body. Hope that helps. Here's a very opinionated but helpful podcast episode on the topic: bengreenfieldfitness.com/podcast/nutrition-podcasts/episode-127-why-saturated-fat-wont-kill-you-but-vegetable-oil-will/
In short, just use lard đ€Łđ„°
@@sd.2528 I love using coconut oil! I can find a huge container of it at Costco. And I use avocado oil in my cakes. Olive oil for everything else, but you have to watch which brands and where you buy it. I also get my extra virgin olive oil at Costco.
The best apple fritter i came across
Thanks!
Thanks!
Thank YOU!
Hey Brian, I just made these today! Another success! I definitely need to commit further to chopping it up and recombining it. Use a bit more flour to keep it from falling apart. All that said. First time out, they were really good! QuestionâŠ. Can I put the dough in the fridge over night along with the prepared apples so I can have fritters before lunch?
nicely done
Thanks a lot! And thanks for watching
NOTHING will hit as hard as Dunkin Donuts coffee and this Apple Fritter.
I like to add crumbled bacon and bits of caramel to my fritters.
Absolute heaven!
this is just what I need in my life. OMG - Everything you said about donut shop fritters is like you took the words out of my mouth! Good fritter = Good everthing
This looks like a great recipe. How did the baked versions work out?
Made these today and they were every bit as awesome as you said they would be. Thanks for sharing such a great version of these. The apples were flavor packed and the fritter was crispy and chewy and reminds me of some of the best donut shop versions I've had in the past. My family loved them.
Chef I love your food tasting Beanie!!đđ»ââïž
haha thanks!
Any adjustments you think I should make with peaches? I've got 30-40 peaches that I need to figure out what to do with and this had my mouth watering.
Drooling all over the place đ
Watching this video makes me want more...but we ate them all the first day đ€·đœ
