How to Make Quick and Easy TUNA PASTA like an Italian

  • Tuna pasta is a refreshing pasta dish, suitable for all seasons and it can be enjoyed hot right away or even cold as a salad. Smothered with tuna soaked in fresh lemon juice and zest, this dish screams Summer in Italy and is bold in flavour. Tuna pasta is likely to be your newest mid-week pasta meal - it’s simple, light and perfect with fusilli pasta which really soak up the ingredients.

    INGREDIENTS
    300g Fusilli Pasta
    400g tuna in olive oil (1 large Can)
    1 large lemon
    Small jar capers marinated in salt
    120g rocket/arugula salad
    Small bunch fresh parsley (chopped)
    Extra virgin olive oil (EVOO)
    UTENSILS
    Fork
    Wooden spoon
    Medium fry pan
    Large pot (for boiling pasta)
    Hand-held sieve
    METHOD:
    1. Tuna pasta needs good quality fusilli pasta, cooked one minute less than the required time, so start by adding 5L water to a large pot and put it on the stove to boil.
    2. Next put your fry pan on the stove at a medium heat and add a drizzle of extra virgin olive oil (EVOO).
    3. Mix in 400g tuna, breaking it down into small pieces using a fork, then add the zest of a lemon before cutting it in half and squeezing fresh juice from both sides.
    4. Stir the juice into the tuna pasta mixture using a wooden spoon before adding the capers and fresh parsley and mixing through.
    5. Add salt, pepper, mix once more before leaving to simmer for 5 minutes then remove from stove.
    6. Next add a pinch of rock salt to the pot of boiling water.
    7. Put the dry fusilli pasta in the pot and cook 1 minute less than the required time.
    8. Once the pasta is ready, put the fry pan back on the stove at a low heat and add 1 cup of pasta water before mixing using a wooden spoon.
    9. Add the drained pasta to the pan and combine really well adding more pasta water if necessary. This will help thicken the tuna pasta mix.
    10. Mix for up to a minute, remove tuna pasta from heat.
    HOW TO SERVE:
    Serve up a generous amount of tuna pasta in a flat plate or bowl. Using a spoon, scoop up extra tuna mix and add it to each serve so every mouthful is filled with the perfect combination of flavours.
    Drizzle a dash of EVOO on top along with a sprinkle of freshly chopped parsley to garnish.

      How thoroughly do I need to rinse the capers in salt? I bought a jar of capers in sea salt and put them in a bowl washed them twice in there. They were still very salty afterwards.

      I agree. So many online cooking tutorials want you to know physics or whatever or use the wrong ingredients. Vincenzos videos are proper, as you would expect for an Italian but are so friendly and accessible

    Hi, I’m Japanese and I love this tuna pasta recipe which values the tastes of ingredients.
    Very agree with what you mentioned in the video, didn’t need garlic. Taste of tuna, parsley, lemon are producing a beautiful harmony.

      Calories are calories are calories. ;)
      A plate of this has 900-1200 calories, which is half of a days need for an average adult.
      My meals have around 450-600 calories and are just as big.

    I have been wanting to make this, so I finally made it tonight with what I already had in my kitchen. That said, the right ingredients do make a difference in certain recipes. I had 1/2 of a jar of capers, no fresh parsley but I did have the arugula, tuna in water and I used elbow pasta. I added extra olive oil to the pan and held back on adding extra salt. This tasted very good and I think would only be better with all the ingredients this recipe calls for. I haven’t had a big bowl of pasta in ages so I enjoyed it even more. Thanks Vincenzo! I will be making again! 🥰

    I just ate 3 servings to myself. I use Barilla protein pasta tho. It still has the wheat but also has legumes and veggies the pasta water is excellent and very starchy, I think it’s from the chickpea . It’s the only pasta that taste like normal pasta but has more protein and fiber. This meal was a protein fest. Loved it! Amen brother! Keep it up

    There is really something to be said about cuisine in Italy, such an appreciation for simple recipes but the techniques used and quality of the ingredients chosen really make it special. So many things those of us living in North America often forget about!
    Another recipe that I will for sure try, and might compel me to never have tuna mac again! This looks delicious!

    I love that you start out with tuna and lemon and really bring that together first before doing anything else. Most people add tuna way too late, fearing that they would dry it out. But you rehydrate the fish with the lemon and then with the pasta water. This makes the tuna so much more fragrant than it could ever be from its own moisture. You’re a genius!

    I use farfalle, I like this one because its a cute pasta 😆, but my recipe is far away looking tasty like yours. I'm so glad to find your chanel, i arrive late just 2-3 weeks ago only, but I love it very much. You inspire me to cooking more and trying to make new recipes and all home made.     Vincenzo, I made this recipe today after watching the video. I cannot stand the taste of parsley so I used fresh basil from my potted basil plant and as I had no lemons I used two limes instead. I thought it tasted great. Europeans and Americans always reach for lemons but I lived for years in Mexico and came to prefer limes.

    Perfect timing....I ran out of meat this week so tomorrow I will have to use tuna. I don't have arugala so I will use japanese mizuna from my yard....hey they are free from my backyard so I am just going to have to improvise.

    I've nevert thought to use lemon. I guess it must be tried.
    Personally i cook tuna pasta in a even simpler way:
    1. Mix canned tuna with minced garlic, parsley, olive oil and salt.
    2. Let the mixture sit until the pasta is ready to blend the flavours. (more it stay the better)
    3. Toss it on the drained pasta and mix everything.
    4. Enjoy hot or cold.

    I have made this twice and it keeps getting better. Only thing is no store near me sells capers so I use anchovies since there is enough salt and they do add good flavour to the pasta.

    He really is right about using salted capers in this dish!! I cooked it once with brined capers and because I already had all the other ingredients but could only find brined capers. Then I got my hands on salted ones, cooked this again and wow, the difference is really *huge*! Next time, I’d rather leave the capers out entirely if I cant find the slated ones.

    I like to add a lot of onion. It adds a delicious sweetness. I think chili flakes are also a must. Everything else you used was perfect.

    Thanks for mentioning the flavor/texture you get from the parsley stalks. So many videos show them being discarded, which I think is a crime. I'm going to try this recipe as soon as I can assemble the ingredients.
