    I remember my first time canning meat. I was terrified to eat it. LOL. Now I love the convenience and knowing I’ve followed safe standards, fear is not an issue. We love beef over fresh noodles, or quick French dip sandwiches. Chicken in soups, pot pies, bbq chicken sandwiches
 you name it!

      I'm still coping with the fear aspect lol! Even though I do things by the book, it still frightens me a bit - I don't know why, when I open the jar and it smells so good!

    I retain the fat on the meat when canning beef and pork because it is a source of cooking fat when the jar is opened. In tough times cooking fat is a valuable resource.

    Hi Leilonie, I originally got into pressure canning mainly to preserve meat. I’m a hunter, trapper, prepper and provider. I get a lot of satisfaction knowing I can hunt a deer, butcher it and can it entirely by myself and I can be assured it will last more than five years. Year six test coming up this fall.
    I like to use canned meats for tacos, enchiladas, bobote and stews. Honestly it’s like pot roast when reheated in a pan.

    Hello! I'm really enjoying your videos. We have quite a few Amish in our area of southern Indiana, but I have basically no contact with them other than frequenting their wagons when they come to town to sell their wares- which are wonderful! I have pressure canned most meats except fish. We use it for all sorts of things- stroganoff, soups/stews, sandwiches, BBQ/pulled pork, casseroles of every variety, and all types of Mexican and Italian dishes. There really is seemingly no limit to the uses of canned meats. It is so convenient and fast when you have unexpected company or just a rushed and interrupted schedule. Thanks for sharing about the Amish canning though. I've been hearing recently about "rebel canning", but it is interesting to find how others have done it successfully for so many generations. You've really opened up a whole new door of possibilities. Keep smiling and know that God is using your videos to bless many!

    Just recently started canning meat. But we’ve used canned ground beef for tacos, and soups. We’ve used canned stew meat for beef tips with gravy over rice, and recently canned beef stew (beef, carrots, potatoes & onions). I’ve used canned chicken for Chicken Alfredo. I didn’t grow up in a canning family, but my husband had canned veggies before. Now we are both on a canning/ preserving journey together to hopefully help sustain us through whatever crisis might be on the horizon.

    You forgot to mention how long it lasts and where to store it. It’s kinda important. Another thing is I was watching this vid with the intention of making my dog some prepared food in advanced, I’m glad theres no need for salt. Looks appetizing for them.😊

    The reason why it is "still bubbling", is that the lids were sealed, and the empty space in the jar was filled 100% with water vapor from the cooking (no air). When you turn off the heat, the gaseous water vapor start to liquify - gradually turning said empty space into a vacuum, and thus lowering the pressure inside the jar. Since water boils at lower temperatures under lower pressure - this is why you see it bubbling.
    Ain't physics cool :)

    Looks great! I've never pressure canned, just water bath, but it takes longer. I grew up with my mother's, grandmother's, and great grandmother's canned food, meat and fish included. I love your videos!

      How many hours do you boil your meat in a water bath? I did five hours at a rolling boil. Chicken. Looks great! I am new to canning. Did you add vinegar or lemon juice? I wiped the rims and top with distilled white vinegar. I kept a pan beside of the water bath with rolling boil water. Had to add that water to the water bath about four times. Did I over cook or do the meat right?

    Never thought I would EVER can anything let alone meat (helped mom cam as a kid). Welp. I love it! Tender, flavorful, EASY and if the electricity goes off it's just fine on the shelf. Beef, chicken. Pork turkey hamburger chili. Taco meat, stew, meatballs. Yum!!!

    Sometimes I invert an opened jar over a strainer while I'm prepping the rest of dinner to get all of the liquid out. And do not waste a drop of that juice in that jar ever... it's amazing. In a smoking hot cast iron pan I will put a little bit of the Tallow or some butter and put the meat in there. I let it sit until it's crisp, flip it, let it sit until it's crisp and then proceed with making dinner. You get the benefit of the tenderized, luscious canned meat and that crispy, millard, umami of the fry. Yum. This is not only an adequate way to use a preserved food but it is a way that parts of my family prefer..... They went from "oooh... icky... canned meat" to "do you have any of that canned meat!"

    One of my favorite ways to use canned beef or venison (besides the obvious stews and meat pies) is as a BBQ for sandwiches. I have often put a few cans of venison in a crockpot, along w/ sautéed onions and our favorite homemade BBQ sauce.
    I've taken it to church and family potlucks and folks think it's BBQ beef brisket. Sometimes I tell them what it is, and sometimes I don't.:) I've had people that "didn't like venison" tell me it's delicious, lol.

    My grandmother used to can a lot of pork, and she made it pretty salty because she used it primarily in soups and stews, so no additional salt needed. My grandpa used to use it to make what he called "Navy Macaroni", and this was always when grandma was not around to make dinner. He was the OG of hamburger helper :) All he did was dump a half a jar into a pot of fresh noodles and stir. He called it "Navy Macaroni" because his story was that on naval ships, toward the end of the journey, sometimes they run low on things, meat being a precious commodity with all those men on board. So, they would stretch the meat by mixing it with starches.....He was never in the navy, he was a pilot, but his Navy Macaroni was my favorite :) I now make Navy Macaroni, but I put kale or some other green in it, but it's still a household favorite.

    Good video! We always add garlic and salt, too. And your very correct,,,deer meat is tops!!! You can eat it right out of the jar! We cold pack our meat for a hour,,,we didn’t die, but I’ll boil it longer, seeing that’s how the Amish do it. My gramma was also German and she was amazing at preserving foods! God bless you.     Great video! I just canned ground beef and some ground turkey that I got at Sam's Club the other day. I love canning meat to save on freezer space, and also it is truly a money saver. Meat has gone up in price so much, and I'm sure it's going up even more. I like using canned ground beef in taco soup and chili. I usually do pint jars because that's usually enough for one meal for a couple. I also like to can chicken for soups. At thanksgiving, any left over turkey meat gets processed as well. Thank you for sharing!

    thank you for letting us know its OK if the liquid doesn't come qll the way over the meat, I ha r several jars I canned with London broils and round roasts with taters and onions and carrots for quick easy meals and about half do not have the liquid covering the jar contents, but they all sealed within the first 12 hours out of the canner. on a side note my hubbie was enthralled that the jars continue to bube for a while after being removed from the canner lol. great video thank you!

      Price and shortages are 2 great reasons to can meats, but after you have canned a batch and tried your produce, you will have one more great reason to can meats! It tastes so tender and amazing that you will wonder why you never did it before!

    Great video! Thank you for posting.... I've been canning veggies for a while, but the first time I did meat was right after Covid hit and the meat plants shut down for a while. I'm glad I took that step. It's awesome being able to choose and season your own meat and preserve it for the long haul. Yesterday I went out and got a big package of boneless skinless thighs and a pork tenderloin, today I marinated them in Wright's liquid Mesquite Smoke. Then I packed them with a couple of mushrooms, onion, garlic and cilantro - I can't wait to try them lol!

    I worried about some of my canned meat that wasn’t completely covered and I was glad you said it’s ok. I’ve canned chicken, hamburger,ham, pork,hot dogs,sausage and sausage links. I’ve also canned potatoes, chili, soups and broths and lots of pinto beans in different recipes.
    I’ve dehydrated my veggies and I grab some of those and the meat of choice and love to make a pot of stew or soup.My garden did poorly this year as well as farms around my area so I am not canning tomatoes unless I find reasonable priced ones
right now they are $ .75 each.
    1870 Farmhouse did potatoes OBrian where you freeze potatoes without blanching them
..then freeze. I made some bags of those to take camping and it’s great. So quick to open the bag of potatoes and fry in a little bacon grease till crispy. I mix them in some cornstarch for crispness and take a jar of home canned sausage and make sausage gravy to pour over homemade two ingredient biscuits, some fried eggs and you have a yummy meal.
    I love to cook so having my own little pantry to pick from is fun to have when coming up with different meals. I belong to the group Meals In A Jar and make up quarts of dehydrated meals
.their recipes call for Thrive freeze dried products but I make my own
the freeze drier is a large investment and right now I look at it as all that money could buy lots of meat to can.
    When thickening meat broth I use grass fed beef bone gelatin adding more nutrition then flour or cornstarch

which I just read cornstarch does not hold up long term but if you have the ingredients you can make up as you need it and those ingredients do store well
who knew.?
    1870 Farmhouse makes their own pizza sauce and that’s one recipe I would like to make. My husband loves naan bread pizza that I put in my air frier to bake..always good and it doesn’t heat the kitchen up.

    Thank you for sharing with all of us, it brings back memories for me. I raised my kids on a farm so we always had veggies, meat, fruits and dairy to can. My favorites were the canned meals like chili, beef stew, corned beef with cabbage and soups. I have done a lot of rebel canning but my Mom taught me how to can everything from our garden in hot water bath canner because she was afraid of pressure canners. I loved my pressure canner for meats though.

    I love canned up meats! As I’ve aged, my teeth! It’s hard to chew any tough meats. So canning has become my best friend. It falls apart, so tender and you can season pretty much anyway you like. Very nice video

    I water bath my meat . I use pints just because my preference. I place in bottom of jar, 1/2 teaspoon of kosher salt, 1/8 teaspoon placket pepper, 1/4 teaspoon ea garlic powder and onion powder, 1heaping tablespoons my dehydrated onions. I also like putting in 1 tablespoon of fresh bacon grease. I pack my cubed meat in on top. Wipe jars place flats and rings on and hot water bath 2 3/4 hrs after it returns to a boil.
    I use in beef stroganoff, chili instead of ground beef, stew, Soups, openface with mash potatoes, add BBQ sauces and Krystalize it, for sandwiches, love love canned beef.

    Hello from Leola, PA. We bought a Mirro-Matic pressure cooker from our Amish neighbour who bought a house and cleaned out a hoarders stach! 5 bucks. Looks real good. We had trouble opening and closing the lid so I googled pressure canner and landed on your u-tube channel! So glad I did. We canned turkey gizzards for the first cook.We noticed you put onions with the meat so we tried it too. We added lemon pepper, granulated garlic, kosher salt and a pinch of cayenne pepper and brown sugar. It turned out REALLY delicious! Real tender! Cooked about 2 hours.Thank you! Growing up Amish we never used a pressure canner.

    I can my deer meat, chicken, beef and pork! I make a lot of deer stroganoff which is excellent! Beef and pork barbecue, chicken and rice casserole! They are many good recipes we use our canned meats in! I was the same way, scared to eat it at first but after eating it and tasting how amazing it is, I will can a lot more of it!

    My mom always pressure canned meat, especially for Sunday meals. So I was used to the deliciousness of canned meat. Just so tender and flavorful. I use my canned meet for combining with noodles or pasta and tomatoes. Also for veg soup or chili. Yum. Great video. I am going to go pressure can some turkey breast filets now. .

    Gonna do it this way the next time. I usually trim the fat off , pack but then use water over it. It has turned out awesome and makes the best soups, stews & stroganoff ever. I do most of my beef in quarts but my chiken in pints. I only can the white meat of chicken because I do not like the appearance of the dark meat in jars.

    Loved your video. I have canned meat for stew, added roast like you make to vegetables for my usual roast meal. I have also canned ground beef for quick supper decisions and lots of taco meat.

    Use wide mouth jars also for this as when you age it will be in the best interest for you to still keep on canning meats & doing canning with the wide mouth jars for other fruits & vegs. !!! I was lucky enough to have bought all of my jars and they came from 1970's !!! They still do the job for me only a few of regular mouth jars of mine are in the basement !!!

    Thank you for using a pressure canner for your video.
    My grandma got lucky for so many years using a water bath for meat, but all it takes is that one time and you have a dead child on your hands.
    I know that for many people, believing they are right is worth risking their childs health, but I just don't get it.
    If you watch the show naked and afraid you can see the toughest of people, the ones that you just know are going to make it, being taken out by a little organism that is too small to see.
    I think one of the most useful sayings that I have ever heard is "just because you can do something doesn't mean that you should."
    I used to visit Mexico often. I always bought bottled water. I probably would have been fine drinking tap water but why risk it just to prove a point.
    I have no business telling anybody that they are doing something the wrong way but I thought I would take a few minutes out of my day to thank you for showing people a safe way to preserve meat. (Or anything that has a low acid content)

      even with pressure canning, it is advised not to pack meat tightly or can very thick meat sauce as the temperature needed to kill botulinum toxin does not reach the centre of the can, just the outsides reach the needed temp.     I've just begun to can meet this last year my favorite I would have to say is meatballs I actually bought some Italian sausage and baked it in the oven not completely and then packed it in my jars put hot water over them and canned it.Just found you on here but have enjoyed watching and learning new things.

    My favorite ways to use my canned meats are in pot pies, especially for chicken. I use my dehydrated veggies and canned meat and it is delicious!! I also love canned meats in soups and stews. I also can pulled pork and just add BBQ sauce for sandwiches!

    😊Thank you for sharing. I did some ground beef about 2 months ago and have yet to try it. It was a really good sale so I figured this was the time to see if we like it. See comparisons is great. I found there is a big difference in chicken raw pack vs hot pack. I do both but we like the texture more of the got pack.

    I love canning meat! I make meatballs, Salisbury steaks, burger Pattie’s, cubed meat that I use in tamales, enchiladas, tacos, sandwiches, add it to gravies for shit on a shingle, I put it over rice or potatoes. I make soups, stews, and casseroles out of it. It is so versatile and handy to have. Our Kroger has pork shoulder on sale right now so I just canned a bunch of that up the same way you did this beef. It is a time saver and freezer space saver for sure.

    We use our canned meats for hot roast beef sandwiches, creamed beef over bread, soups and stews or just out of the jar. Beef stroganoff, beef tips over noodles, beef with potatoes,,,,so many ways to enjoy this meat! Dee

    I use my canned venison in stew, stir fry, and stroganoff. Canned pork loin in gravy. Raw pack beef stew with potatoes, carrots, and onion by itself. Canned corned beef brisket in corned beef hash with potatoes and onions over toast topped with an egg over easy.

    I can meat all the time but with my cubed beef I use it to make soups especially beef and barley. Also shread it and put in tacos

    I absolutely love my canned meat! I use chicken for quick soup, pasta, butter and cheese and tacos. I use beef and port in soups and stews as well as tacos. Oh yeah and sandwiches both hot and cold!

      Think of it as leftovers, and you are rolling it over to another meal.
      Ground meat>>[browned enough not to clump]>>(beef, Italian sausage, pork, breakfast sausage)Ă·Ă·BEEF...tacos, chili, spaghetti, lasagna, shepherds pie [pot pie casserole with a mashed tater 👒 darlin'!), sloppy joes; sausage&gravy for breakfast, breakfast casserole, sausage dip!;
      And roast, oh so tender. Prefer to season and brown my chunks b4 packing the jar, a little broth, and now you got gravy to go with your roast. 》
      Chuck roast is absolutely fab.
      Boston pork butt>>roast, or pulled pork;
      Leg of lamb.

    The only meat I've canned is chicken, raw packed. I can fit 6 drumsticks... or 3 thighs and 3 drumsticks in a quart jar. I'll put some salt & pepper, maybe a splash of chicken broth and that's about it. The chicken meat also makes it's own broth! Also pressure can for 90 minutes!
