Delightfully Decedent Chocolate Shortbread

  • This chocolate shortbread recipe is simple and results in a decadent chocolate shortbread. It has a crispy outer coating with a chocolate center that will melt in your mouth. The perfect sweet treat to share with those you love!
    Ingredients:
    o 2 cups all-purpose flour
    o 1 teaspoon instant coffee or espresso
    o 1 cup butter (at room temperature)
    o ½ cup cocoa powder
    o 1 cup powdered sugar
    o 1 teaspoon vanilla extract
    o 1 cup melting chocolate wafers
    o sprinkles
    Instructions
    1. Preheat oven to 350 degrees. In a bowl, combine flour, cocoa powder, and powdered sugar; set aside
    2. In a mixing bowl, mix butter until smooth. Next, add dry ingredients and mix on low until blended. Use your hands to form dough into a disc on a lightly floured surface or sheet of parchment paper. Place a sheet of parchment paper over the disc, use a rolling pin, and roll out until ½ inch thick. Use a cookie cutter to cut out cookies and place them on a prepared cookie cutter.
    3. On a light-floured surface or sheet of parchment paper, use your hands to form dough into a disc. Gather scraps and repeat step 3 until all dough is used-place shaped shortbread in the refrigerator for 30 minutes.
    4. Remove chilled shortbread from the refrigerator and bake for 12-15 minutes. Next, remove baked cookies from the oven and allow them to cool completely.
    5. In a microwave-safe bowl, melt chocolate wafers according to the wafer instructions. Once the chocolate is fully melted and smooth, dip shortbread to coat half and add sprinkles. Allow the chocolate to set, then enjoy.
