Red Velvet Truffles........made with L O V E

  • This Red Velvet Truffles was made for sharing. The super moist red velvet filling coated in silky white chocolate, screams I LOVE YOU! Weather its a friend, family, a lover or a gift to yourself.... Its screams made with LOVE.
    Ingredients :
    o 2 Cups cake flour
    o 1 1/4 Cups granulated sugar
    o 3/4 Teaspoon baking soda
    o 2 Tablespoons unsweetened cocoa powder
    o ½ teaspoon salt

    o 3/4 Cup canola oil

    o 3/4 Cup buttermilk (at room temperature)
    o 3 eggs
    o 3/4 Teaspoon white vinegar
    o Red food coloring
    o 24 oz white chocolate

    o chocolate sprinkles
    1. Preheat oven to 350 degrees
    2. Mix flour, cocoa powder, baking soda and salt together in a bowl. Set aside for later.
    3. Using a hand mixer whip sugar and eggs together, on medium.
    Then add in oil and vinegar mix until well blended.
    4. Add dry ingredients, rotating between adding the flour mixture and buttermilk. Once combined, start adding drops of food coloring, a little at a time. Stop with you reach your desired shade of red.
    5. Pour batter into a sheet pan. Bake for 10 - 15 minutes or until inserted toothpick comes out clean. When done, remove cake and allow to cool.
    6. Crumble cake into a large bowl, add cream cheese. Using a mixer or your hands, blend until all the cream cheese is incorporated into the cake you have a soft, batter that holds together.
    7. Using a 1.5 tablespoon scoop, scoop out cake form into a ball and place on a baking sheet lined with parchment paper. Next place balls into the freezer for 30 minutes.
    8. 10 minutes before you remove your balls from the freezer, melt the chocolate. In a bowl heat the chocolate in the microwave, 20-30s at a time. Fold chocolate to promote melting after each 20s , until all chips have melted and chocolate is smooth.
    9. Drip each ball into the chocolate, using a fork gently turns balls until fully coated. Then using the fork lay the ball on baking sheet and sprinkle with chocolate sprinkles. repeat until all truffles are covered.
