  • These Lemon Crinkle Cookies are the best lemon cookies you will ever eat. It's a soft fluffy center infused with the perfect balance of a sweet yet tart lemon flavor. All wrapped in a crispy sugar coating with a crackle finish.
    Ingredients:
    Cookie batter
    o 3 cups all-purpose flour
    o 1 teaspoon baking soda
    o ¼ teaspoon salt
    o 1 cup butter (at room temperature)
    o 1 ½ cups granulated sugar
    o 2 eggs
    o 1 teaspoon vanilla extract
    o zest of 2 lemons
    o juice of 2 lemons
    o 1 -2 drops yellow gel coloring
    Cookie coating
    o 1 cup confectioners’ sugar
    o ¼ cup granulated sugar
    Instructions:
    1. Preheat oven to 350 degrees. In a bowl, combine flour, baking powder, and salt.
    2. In a mixing bowl, cream butter and sugar together. Add eggs and mix until smooth, then lemon zest, juice, and vanilla extract. Next, add 1-2 drops of yellow gel coloring and blend. Lastly, add dry ingredients and mix until blended. Chill the cookie batter for 30 minutes to an hour in the refrigerator. 3. Combine the confectioners’ sugar and granulated sugar in a bowl. Using a scooper or tablespoon, scoop out dough and roll in-between palms to form balls. Generously coat each ball in the sugar mixture and place it 2 inches apart on a cookie sheet. Bake for 10 minutes.
