Making fluffy and crispy vetkoek aka magwinya! We found a drier batter we could work with!

  • Vetkoek or Magwinya are a South African fried dough ball that is very versatile and can be eating just by itself or with anything from sweet jam to polony and even mince. It is one of those South African specialties that crosses cultural divides and is enjoyed all across the country!
    We initially struggled because many doughs are more wet, similar to a goolgoola batter, meaning it was difficult to form bigger dough balls to fry. We found a drier dough and gave it a try. Forming the dough balls still takes some learning but this is part of the journey and we will get there in time.
    Ingredients
    3 cups cake flour, sieved
    2 tsp yeast
    1/2 tsp salt
    1/4 cup sugar
    1 tbs oil
    1 1/2 - 2 cups lukewarm water
    Fry until brown and crispy. Serve with polony or jam or cheese and butter.
