    Nihari is a popular slow-cooked stew originating from the Indian subcontinent, particularly associated with Delhi, India, and Pakistan. It's typically made with slow-cooked meat (often beef, lamb or mutton) along with bone marrow, spices, and sometimes wheat flour or other thickeners to create a rich, flavourful gravy. It's often served with naan or rice.

    Ingredients (Serves 2-4):
    Lamb Shanks - 1.2KG
    Onion - 200 grams
    Clarified Butter - 1 Cup/250ml
    Garlic - 2 TBS (2 frozen cubes)
    Ginger - 1 TBS (1 frozen cubes)
    Kashmiri chilli powder - 2 TBS
    Salt - 1.5 TSP
    Chilli Powder - 1 TSP
    Turmeric Powder - 1 TSP
    Coriander Seeds - 1 TBS
    Cumin Seeds - 1 TBS
    Fennel Seeds - 1 TBS
    Dry Ginger Powder - 0.5 TSP (Half)
    Long Pepper (Peepli) 3
    Star Anise - 1
    Black Cardamon - 2
    Black Peppercorn - 1 TSP
    Cinnamon Sticks - 2 small
    Bay leaves - 4
    Nutmeg - 0.25 TSP (quarter)
    Mace - 0.25 TSP (quarter)
    Chapatti or plain flour - 90 grams

    Very authentic masala you have shared , but take care of one thing that you must not add ginger paste while cooking , left ginger to add in the end after finish cooking in form of julien cut , as garnishing.

      You can add ginger while cooking (powder ginger is a must) and then later as julienne for garnish as well.

      Yes no ginger went in apart from powdered, juliennes are a must with chillies and lemon, with lovely hot fresh naan. 🤤🤤🤤🤤

      It’s really really nice. Due to the long slow cooking process, there is a LOT of flavour in the sauce if cooked properly.

      @@NAStheNomad Not actually tried this dish but I imagine it is very much like a lamb Handi, slow cooked until the meat is like butter and most the flavour has gone into the wonderful sauce/gravy. I will stop there mind it is making me rather hungry :).

    Loved the way you shared the nitty gritties of the Nihari recipe. It's a staple dish in Pakistani dinning, esp. on Eid ul Adha! One can make a quicker version by pressure cooking the meat and later adding lightly browned flour to cook it in the nihari. For healthier version, you can use ghee instead of oil, and cut down on the fat to devour it without a worry! 😋

    Great cooking video of NIHARI (shanks). Obviously, NIHARI is a delicious dish but I am always concern about SATURATED FATS on this dish. It is good that you took off or skimming the oil & animal fats from the top. Most certainly, I will not put it back those unhealthy oils and fats on the dish for more flavors as final touch.

    I love cooking and trying new recipes but my problem is most recipes are usually for like 500gm-1kg and i usually like to cook around 1kg-2kg of meat.
    If i double the ingredients then it never tastes the same.
    Any chance you can cover tips on scaling curries or even do a video

      I normally just double everything, sometimes cooking times need to be adjusted to take the extra meat into account.

    If i want to double the meat will i need to double the recipie spices etc or will the recipie be sufficient for more meat? Thank you

      If you want more shorba (sauce) then yes double everything, although we had quite a bit left over. So you can get away with using the same recipe and adding in more meat.

    Oooo never cooked this dish im thinking when you add the water, it can be transfered to a slow cooker, which will be about 4 hours. Looks great tho

    Well I didn't know farm foods did lamb shanks. I will try this. I have eaten a roast dinner this evening but my stomach is rumbling just watching this and looking at the spices and herbs. 🙏🏼

      They do indeed, they aren't always in stock but we grab them when we can, normally in with the frozen lamb legs.

    Couldn't get lamb shanks so got mutton mix bone marrow will that do

      Yes but will need to be cooked for a longer period, adjust cooking times to suit, you want to make sure the meat is similar to mine before adding the flour

    To anyone who can answer this, as much as I love Pakistani food, I don't like lamb. Having said that, is there a suitable substitute for lamb shanks? Thanks in advance. I ask because I would consider making this at home, if so.

      It's traditionally made with beef, so if you can get beef shanks from your local butcher then go with those... you'll have to adjust cooking times to suit and get them cut up so they aren't too big. Let me know how it comes out!

      @@MyLittleKitchenRecipes I finally made the Nihari, and as it turned out, it doesn't stand out to me in regards to the kinds of beef stews I'm familiar with in the United States. There is one thing, however, I did not use fennel powder, which is something else I don't like using, but I used everything else, including Black Cardamom, Mace, Cloves, Ceylon Cinnamon Stick, and pippali, among other spices. It's good, but for some reason, it wasn't as rustic as I was expecting. I made this in a cast-iron dutch oven, and I cooked it for about 3 hours. Having said this, I would make this again. I can't imagine not using fennel powder would make that much difference. Let me know what you think.

    I don't think I could afford to put my gas on for 2.5 hours....can it be done with a pressure cooker?

      I'm guessing it could be done in a pressure cooker, but be wary of timings and obviously when adding flour you have to be careful not to burn it.

      Hi you can put it in a pressure cooker however it will not have all the flavours in the meat will taste boiled .I had one from a restaurant and that's how it was made as they need to get the food out quick. Best to cook it slowly. 👍

      Cooking in a slowcooker overnight is the cheapest way. But you do need a slow cooker.

      @MyLittleKitchenRecipes I'm not surprised...I have made so many different nihari recipes over the last decade! It's my favourite dish by far.
      Maybe in the future you can do a video on different versions of nihari...like nalli nihari v javed nihari etc...and the difference between using beef and lamb in terms of taste within the different versions!
