How to make Chicken Teriyaki with Homemade Teriyaki Sauce

  • A very simple, easy and quick teriyaki chicken. The teriyaki sauce is so versatile that it can be used for many other dishes such as for stir-frying veggies or glazing other proteins. Chicken teriyaki may be served with rice, salads or noodles.

    Ingredients
    Teriyaki Sauce
    200 ml Cooking Sake
    200 ml Mirin
    250 ml Soy Sauce
    60-90 g Sugar
    500 g Chicken Thigh
    Cornstarch
    3-4Tbspn Teriyaki Sauce
    Japanese Mayo
    Furikake (Optional)
    Procedure
    1. To make the sauce, combine all the ingredients in a saucepan and bring to medium heat. Do not boil. Stir until the sugar is dissolved. Transfer into a container and keep in the pantry until ready to use.
    2. Slice each chicken thigh into four pieces. Dust both sides with cornstarch.
    3. Heat up pan over medium heat and add a tablespoon of oil. Add the chicken and pan-fry just until the outer part on each side has a nice brown color.
    4. Add Teriyaki sauce and let it reduce. The sauce will start to thicken and caramelize at the same time cooking the chicken. Flip or toss for even cooking.
    5. Plate and squeeze a dollop of japanese mayo.
    6. Serve and enjoy.
