Japanese Souffle Cheesecake [No Music]
Jiggly and fluffy Japanese cheesecake.

INGREDIENTS
140g Cream cheese, soft
20g Butter, soft
50ml Milk
3 Egg yolks
30g AP-Flour
5g Cornstarch/cornflour
3 Egg whites
5ml Lemon juice
80g Sugar
Procedure
1. Pre-heat the oven to 200°C
2.Combine the cream cheese, butter, and milk in a bowl. Mash until lightly mixed.
3. Place the bowl over hot water and mix until they are all melted and well blended.
4. Separate the egg yolks and egg whites. Add the egg yolks with the cream cheese mixture. Whisk to combine
5. Add the flour and corn starch and mix until well combined.
6. Strain the mixture.
7. Add lemon juice with the egg whites and start whisking.
8. Add the sugar gradually once the egg whites form bubbles
9. Whip the egg whites to soft-medium peak.
10. Add a third of the meringue into the cream cheese mixture and fold. Add the remaining meringue and fold gently.
11. Prepare the mold by lining the bottom (sides-optional) with a baking paper then wrapping it around with aluminum foil.
12. Pour batter into the mold.
13. Place mold in a deep tray and fill with hot water up to 1 inch and bake: (i) 180°C for 30 mins (ii) open oven door for a minute and reduce temp to 110°C and bake for1hr (iii) turn the oven off and leave the cake inside for 30mins -1hr (without the water bath)
14. Tap for a few times to remove cake from the mold.
15. Slice and enjoy!

Hi tried these the second time but somehow the Baos did not get done from the inside . They were far too soft and uncooked . Wonder what I did wrong ?
Didn’t steam them enough. Stem them longer. Also make sure your heart is high enough to get the water below the steamer.

hi may I know how do u make the top bloom? follow your recipe but it didn't turn the same top
Hi. I used a convection oven with fan forced. You may bake the cake at 160°C a little bit longer until the top part has cracked then lower to 140°C and follow the rest of the steps provided. Hope this helps.
