    Genoese pesto is one of the simplest and most classic first courses of Italian cuisine, it is traditionally prepared with a mortar, the basil leaves are ground and a few more simple ingredients are added. Depending on your taste, Genoese pesto can be prepared with or without garlic and using the right technique you get a very tasty and fragrant sauce. Enjoy your meal!!!
    Ingredients for 3 people:
    1 large bunch of basil
    1/2 clove of garlic
    2 tablespoons of pine nuts
    1 tablespoon of pecorino romano
    3 tablespoons of Parmesan cheese
    1 pinch of coarse salt
    extra virgin olive oil to taste
    Take the bunch of basil, remove the stems and wash it. Place it on a clean tea towel to dry.
    Take the mortar and first put the pine nuts and garlic in it and start crushing them until they become a mush. Also add a pinch of coarse salt.
    At this point add, even in several stages, the basil and mash well this too, once mashed start making rotational movements to make it a sauce.
    At this point, add the grated cheeses and finally, once the latter have also been blended, the extra virgin olive oil.
    This process, before crushing the ingredients and then turning them with rotating movements, lasts more or less 10-15 minutes. Be careful to crush the basil well so as not to find it in small pieces in the sauce.
