    Tonight I really wanted to eat a nice risotto with artichokes, apart from the fact that I love artichokes cooked in any way .. Risotto with artichokes is one of my favorite dishes and it is also one of the classic first courses of our tradition . In the recipe below, I considered 80 g of rice per person, although when I prepare it for my family I add a little more, it's too good !!
    Ingredients for 4 people:
    320 g of Carnaroli rice
    1 liter of vegetable broth
    4 artichokes
    1/2 glass dry white wine
    a knob of butter
    Parmigiano Reggiano q.s.
    1/2 white or golden onion
    olive oil to taste
    1 sprig of chopped parsley
    Salt and Pepper To Taste.
    First clean and wash the artichokes (if you want to see how to clean artichokes read this article). Arrange them divided in half in a bowl with cold water and lemon juice to keep them from blackening.
    Put a fairly high and large pan on the heat and add the knob of butter, a little olive oil and the previously chopped 1/2 onion. Brown the onion over low heat and add a little vegetable broth to soften it.
    Cut the artichokes into fairly thin slices and add them to the pan, mixing everything.
    After a while, add the rice and whisk it, stirring to prevent it from sticking to the pan. As soon as the rice becomes shiny and dry, add the white wine and raise the heat to evaporate.
    Once the wine has evaporated, add the broth to cover the risotto, let it cook for about 20 minutes, this also depends on the type of rice you use.
    While cooking, salt and pepper the risotto and add the broth as needed.
    Once the rice is cooked, turn off the heat and put a handful of parsley previously washed and finely chopped, a drizzle of olive oil and plenty of Parmigiano Reggiano. Mix everything well and serve the risotto hot.
