12 ounces (340 g) all-purpose flour
16 ounces (454 g) granulated sugar
4.5 ounces (128 g) natural cocoa powder like Hershey's
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
5 ounces (142 g) unsweetened applesauce
9 ounces (255 g) buttermilk or regular milk plus 1 Tablespoon of white vinegar
9 ounces (255 g) hot coffee
5 ounces (142 g) vegetable oil
1 Tablespoons vanilla extract

3 ounces (85 g) all-purpose flour
16 ounces (454 g) milk

The cake was delicious! Baked the layers yesterday and made the frosting today. Turned out very well, even though I used sweetened apple sauce and reduced the added sugar by 50 g. My kid asked for second helping 😋

Yay! I’m so happy to have finally put a video together, I’ve been testing for a long time. Hope you like it! This recipe does have milk in it and butter in the frosting, but I could imagine vegan butter or substitutes would work.

@@nilouferyasmeen6772 You’ll need 500grams of softened butter, you’ll beat it until it’s pale white and fluffy for about two to three minutes. Then you’ll add one 400grams can of sweetened condensed milk and mix it until it’s fully incorporated. Lastly you can add a splash of vanilla for flavoring 😊

Hi Liz, I have had luck using carbonated water as an egg replacer. 1/4 cup per egg added last.
Due to allergies I did all egg free baking for 16 years. I usually use oil/water/baking powder but it depends on the recipe. Also in my chocolate chip cookies I’ve used cream cheese to replace egg

I make ermine frosting ahead of time and it freezes just fine. I take it out when I need it, microwave some of it and re-whip it and it's good to go :)

I love the fact that it is eggless. How long can this set at room temp since the ermine has whole milk in it. I want to make this for my son's birthday next week, but it will have to travel for 3 hours before it can be refrigerated again. Will that be okay, or should I go with a buttercream instead of the ermine? I love ermine but not sure how long it can set out.

Thank you for mentioning Dutch process cocoa. That is the only kind that is available here (I am in Europe). Often I forget that I can not simply use that Dutch cocoa and then I forget to add an acidic ingredient.

@@rubmadsarda5380 Yogurt is a pretty common egg substitute. You could also use a flax egg which is ground flax seeds soaked in a few tablespoons of warm water and left to bloom until it forms a gelatinous mixture. Same way you could use chia seeds, mashed banana, buttermilk, condensed milk, silken tofu... it depends on the function the egg is serving in a recipe. Really though, Yogurt (Greek or hung) works perfectly. 1 egg id rough ¼th cup so your egg substitute should be around that quantity.

Thank you for the recipe! My dough turned out well, however, the frosting didn't harden, and when I tried beating it a little longer, it curdeled. The taste is still good, but the texture... Do you know what might be the reason for the frosting not to harden?
Yogurt works well as an egg replacer.

How do I take this beautiful frosting and turn it into a strawberry flavoured frosting.
Will strawberry compote be a good addition to the roux or would it cause my frosting to curdle? So perhaps I need to use compote towards the very end...?

The best egg replacer is one cup of milk with one spoon of apple cider vinegar. Wisk together.

I don’t believe she mentioned this, but I think it’s worth noting. You also need to cook your flour to kill the harmful bacteria in it; if you don’t, you could get sick.

Ermine frosting is pronounced "ermuhn'" and is named after the beautiful ferret like creature who turns a lovely pure white in the winter. ;)
I got great results from just using boiling water in place of eggs. 🤷🏻♀️

Have you tried vinegar in the cake instead of egg? My grandmothers Wacky cake has no eggs and the cake is very moist. She used white vinegar.
I always just stick to the white vinegar, I am not sure if I ever tried any other type will work, I do not see why not.
Her wacky cake was a make right in pan, no need to dirty another bowl, no need to even grease pan. But she did not take it out of the pan, it was and I still do it, keep in a 9x13 pan that has a lid. I have never made it to do any fancy decorating cake. It is just a for home or take along cake.

To make it vegan, substitute plant milk (Oatly full fat oat milk) and use Miyoko’s butter. Vegan products are becoming egg-cellent every year.
