1:17 “you get a sort of *crunch* with it”
If it’s been sitting, even just for a few minutes, the outside gets “crunchy” as the sugar crystallizes. It’s best eaten straight away or kept in airtight containers in the fridge, then removed about 10 mins before eating so it’s not cold and the icing can soften a bit. This is just my experience, but it’s pretty consistent

Well, I'm here because I'm looking for a buttercream that doesn't taste like I just bit into a piece of pure butter so... yeah that statement actually was exactly what I was looking for to know what recipe to avoid.
Alexandra Pippan I recommend ermine buttercream (flour frosting), I have been using ermine buttercream and it’s really nice. Very airy and it doesn’t tast like butter :)
Such a good idea to have people of different ages taste testing the frostings!
It shows us we could use a different frosting when entertaining adults as opposed to cooking for a kid's birthday party. Very useful.
I almost always make American buttercream desserts for children's parties because most children eat that over the meringues. I learned that the hard way. It saves time to boot.

It's actually quite easy with kids: everything sweet is delicious, everything else is disgusting. ^^
Even as a kid I hated sickly sweet buttercream and fondant (unless it was chocolate flavour which reduced the sweetness a bit)
For children, give them straight sugar. For asain parents, give them anything not sweet. Like a cracker or something.

As a parent, I enjoyed hearing all their critiques and reasons for liking or not liking a frosting.
My child is pretty easy going, appreciates most desserts and understands each sweet concoction is unique; however, not all children are the same.
I may have some later who are the opposite and are very picky.
From my observations though, children tend to grow out of pickiness, or at least the pickiness becomes less discriminating. Some things I hated as a child or could barely stand to eat, I love now! And in contrast, some things I loved back then, I don't want to touch again, lol.
These kids are still growing and they may change (or they may not!). Thanks for including them in your video, twas interesting.

That was for me and for those who found themselves gravitating to this video for tutorial purposes for specific frosting recipes from time to time. Since that was was my experience, one day, I ended up listing the time and the name of the different frosting for ease.
I wasn't forcing anyone to watch it in any way.

I am Jasmine and wanted to know what will happen if we will just increase the ratio of white chocolate and decrease the ratio of cream will that stand for a bit longer?
JasLoveBaking you can try ... but it might get grainy because the chocolate will seize if there's not enough liquid

Just thought I'd say that if you add butter to the 'Italian Meringue', it's called 'Italian Meringue Buttercream'. Swiss and Italian buttercreams have similar ingredients but different methods when making them. Swiss does not use sugar syrup, that's why more people prefer Swiss buttercream to Italian (and French) because they find making the sugar syrup a bit challenging.

Great video! I was expecting the children to go for the really sweet icings. The little girl really surprised me with her answers. She was dead on in tasting and judging for most, in my opinion. Butter cream, cream cheese, and plain old icing with powder sugar, butter, and vanilla will always be my favorite but the ganache sounds yummy.

You're Swiss buttercream was actually Italian meringue buttercream. Love you Ann!😘

+Jacob Wilson no that's a different recipe. The adding of the butter does not make it Swiss, it's the type of meringue used that will differentiate whether it is a Swiss buttercream or Italian. Swiss meringue buttercream is made with Swiss meringue which is when the eggs and sugar are cooked together in a bowl over some simmering water, or a double boiler until a certain temp is reached, then it is beat until stiff peaks are reached, then butter is added... Italian meringue buttercream is Italian meringue based, and it is what happened in the video.

+How To Cook That Just a little advise. Salt make the whiped albumen structure more unstable. If you use an acid like lemon juice the albumen will lose less water.

Your American buttercream has a grainy texture because 1. Your butter wasn't nearly soft enough and you really have to cream it until it's very pale before continuing and 2. because you added the icing sugar too fast. To avoid that graininess you start with really soft butter, cream it well and alternate small quantities of the sugar and milk until it's all incorporated. It's still sweet but it will be soft and smooth.

As a brazilian, it’s so hard for me to understand buttercream and cream cheese + sugar (frosting, cheesecake, etc). However, I love ganache, meringue and whipped cream to death. It’s nice how our culture shape our food taste.
A bakery in my town makes AMAZING frosting, literally the best thing I’ve ever tasted. I wanna try these to see if any of these is it.

I have never used granulated sugar in my buttercream frosting and I am from America. I have ALWAYS used confectioners (powdered sugar). Of course using regular sugar would make it grainy!

Hi Angel, I like ganache and the french buttercream - both the ones that melted first. I love italian meringue, the ermine is OK and american buttercream is OK. Definitely do not like the swiss.

The DiamondTrident i guess I could see how to a kid the tangy taste can taste “sour” but to me it’s my favorite
Remember that kids are more sensitive to sour flavors, so it kinda makes sense they don't like the cheese but the yucky American one

Wow, kids have a completely different sense of taste. Or at the very least these kids do. I thought the cream cheese icing was going to be the favorite (cause it is the one I think is best) and the kids didn't like it at all. Very surprising.

1. He is a young boy and isn't familiar with cooking 2. It was noted several times that it had a 'grainy/gritty' texture, if you actually listened and wasn't a smartass, you would have caught on.

funny, I'm from switzerland and I didn't even know we had a own "swiss recipe" for frosting...... and none of my friends knew that either. XD
Just when I had given up knowing how they all TASTE! Thanks so much for the variety of tasters, too. I learned who to listen to based on our similar palates and it wasn't always the adults, lol. Only one thing - the one you called Swiss was actually Italian. (Swiss heats and whisks the egg whites and sugar first over a water bath then beats them and adds butter.) That only matters to me because it's the one I've been planning to try first. Doesn't take away from your AMAZING video, however. Even showing effects of heat and fondant! Really - thanks so much!
