It's Sunday morning, and you wake up to the sweet smells of sausage, bacon, potatoes, cheese, and eggs cooking away. Coffee is brewing and breakfast is in the oven becoming more delish by the second. This mountain man breakfast has been my husbands favorite for as long as we've been married! There's sooo much flavor all packed into one dish! This recipe is traditionally done while camping, using charcoal briquettes and a real campfire! Although it tastes better that way, doing it in the oven tastes amazing too! I know you all will love this recipe!

MOUNTAIN MAN BREAKFAST RECIPE

*NOTE: If you have a larger Dutch oven than what is used here, you will need to use larger quantities of the ingredients in order to have even layers.
| Ingredients |
7 Slices of Bacon, Cut into Bite Sized Pieces
1 Cup Ground Breakfast Sausage
1 Large Onion Finely Diced
1 Green Pepper, Diced
1 Red Pepper, Diced
5 Potatoes, Peeled and Cubed (Enough to Cover in an even layer)
2 Tablespoons Butter
10 Eggs, Scrambled and Seasoned
1 ½ Cups Sharp Cheddar Cheese
1 Teaspoon Garlic Powder
½ Teaspoon Cayenne Pepper
Salt and Pepper to Taste
| Instructions |
In a Dutch oven with high sides, over medium high heat, cook bacon and sausage together. Breaking apart the sausage with your spatula. Cook until brown in color. Drain excess fat.
Add chopped onion, cook for 1 minute. If there is a lot of fond on the bottom of the pan, add ¼ cup of cold water and scrap the bottom clean. Allow to steam for 1 minute.
Add chopped red and green pepper. Season with garlic powder, cayenne, salt and pepper. Cook for 2 minutes.
Top with cubed potatoes in an even layer. Pressing them into the mix firmly. Season with salt and pepper. Top with small chunks of butter.
Cover and cook in a 425°F oven until the potatoes are ALMOST fork tender. About 20 minutes.
Remove from oven, top potato layer with cheese.
In a separate bowl, beat eggs with a splash of milk and any seasonings you would like to add.
Pour eggs over potatoes, gently shake the pan to even the egg layer.
Place back into at 375°F oven for about 20 minutes or until eggs are set.
Serve with sour cream.

We can take it and it's the kind of load that is lighter when shared. I spent almost 30 years dealing with that kind of pain and debilitating depression it causes... find a really good dr and take care of yourself.

I watch each video at least 2 or 3 times. His personality and the commentary is hilarious. I have always loved golden retrievers and wanted one as a child. However, I adopted a chihuahua 5 years ago. I decided to get a rescue puppy so it wasn't a retriever.
I saw your post of your endometriosis and cancer diagnosis. I am praying for your healing of endometriosis and cancer. You are very young and I hope you a fight this cancer. Now that I know, I will continue to keep you in my prayers. Stay positive and find strength through family, friends, and your followers. We are all cheering for you. I hope you keep us your followers posted during your cancer journey! It can encourage/motivate you. Also, you never who has a similiar story and whose life you will personally touch. Praying for your healing. Kick cancer in it's booty!!!
So sorry to hear about your troubles. As someone with depression and anxiety I can sympathize greatly. I do get excited when I see a video of yours because your food always looks amazing, and this is no exception. May have to cut the recipe back since I am only one person though 😆

I can tell just by watching the video that this recipe is delicious. It probably helps that breakfast food is my favorite food but it's a guilty pleasure so I don't eat it all the time. It’s always true that you can never really know what a person is going through just by the way they act when they are around you or in this case when the camera is rolling.
You have so much talent and such a great presence in front of the camera and I hope you find something that works for you to help manage you anxiety and other things.
Of course you should definitely always do what’s in your best interest so if we have to miss out on your happy face because you step away from CZcams then I think we will all live 😂.

I already follow Tucker on FB and Insta, so when I found this video in a search for "eggs and sausage" I was excited to find it's Tucker's mom!
I tried this in a small saucepan, proportionate to a 1-2 person serving. I also did 10 mins in the oven (bc size adjustment) on the first round and 15-20 mins for the second round. I also added Ancho chile' powder in place of reg chile' powder and my homemade pickled jalapenos on top in place of hot sauce. I didn't use sour cream tho. DAMN GURL! It's delicious! Thanks for this amazing recipe! Great after weekend long parties 🍾 meal.
