Apologies for missing your livestream, Mark. Even though our kitchen was finished in 2022, we still watch your videos and recommend them to friends considering kitchen renos.
For the final walk-thru, i would suggest walking thru on each stage to keep an eye on things + ask questions rather than waiting til the end. We caught significant framing mistakes, which would have caused another month without a kitchen. We missed a couple of not anestheticly pleasing veneer end joins on the frames of our cabinets and the top edge of a drawer. Not sure how they will stand up over time.
Have you ever watched @ThePethericks? They are renovating an abandoned convent in France. The kitchen is just about finished and I would love to hear your thoughts on their design. BTW the kitchen is massive. I believe over 1000 square feet!
Edit - store my bread in a drawer which also stores our small toaster oven. Bring it out at breakfast time + stash away when cool.
I did a pantry wall with counterspace and it works great. Base cabinets have lots of staples in bins and such, an upper cabinets hold all the small appliances. For non-shiny counters, leathered granite or honed stone are more matte (I have matte soapstone).
We have our second touchless kitchen faucet and we HATE it. The first had sensors mounted up high on the front. Current one had it on the lower left side. We also have a small tap for our RO drinking water on the left. We cannot activate the RO water without actvating the main faucet. I've have never bothered using the sensor on purpose, but I've activated it by mistake at least a thousand times. Our new sink is in the living room, awaiting install, along with our new, NON-TOUCH faucet.

The US has a lot of gas ovens, especially years ago. Along with the gas oven we will have a gas stove. But now we have all electric in the northern most part of California on the coast because we don't have a natural gas company. You may want to invest in a propane tank for gas, but most of us don't.

We have a tiny kitchen that is blocked in on all sides so we cannot expand.
I hope to have counter space inside my pantry.
The only place I can put my stove range is in an island. How large should the island be for a 30" or 36" wide range? Also how much space behind the range to have seating?
You will want at the very least 15" of landing space on either side of the range. Opt for a 30" if you need to. Obviously the bigger the island the better in this case. Behind the range, I'd go for no less then 12". Again, more is better.
The whole point of cooking is... nutrition! 🤣
Store bread in the freezer.
Baking is overrated 😉
