This is by far the Best way to cook a pork loin in my opinion. Perfectly cooked bacon keeping the loin juicy w/ that chorizo and cheese gooey goodness in the center.
With the effort trust me!

• preheat @Char-Griller Gravity Fed 980 smoker to 250
• cook chorizo till you start to see the oil separate
• drain oil and let cool
• butterfly your pork loin
• cover in butcher and flatten out
• add cooked and cooled chorizo
• add in Mexican blend shredded cheese
• roll up nice and tight
• close and cover both ends with bacon then wrap the rest of the loin with bacon
• place on a wire rack and coat in your @blazingstarbbq Pork’N
• put in your @MEATER wireless thermometer
• then smoke till the internal temp reaches about 120 about 2 hrs
• crank up the smoker to 300 and continue to smoke till internal temp reaches 145 and bacon is perfectly cooked
• let cook for 15-20 mins, slice up and enjoy 🤙🏽

It’s in the description of the video
Please learn the correct names of the foods that you're cooking. Those are two pork TENDERloins and not LOIN of pork. Very different cuts with very different characteristics. It's the equivalent of confusing beef tenderloin with ribeye. Completely different cuts.
