  • You're gonna love this pork tenderloin recipe. As the name suggests, pork tenderloin is a very tender cut of meat. It's super flavorful, moist, and delicious, and easy to prepare. Leftover
    tenderloin is perfect on a sandwich, so cook up enough to leave leftovers...you'll be glad you did. I'm cooking this pork tenderloin with caramelized onions and beans and it's a great dish. A printable copy of this dinner recipe can be found at

    Pork Tenderloin Recipe Ingredients:
    2½ lbs PORK TENDERLOIN
    1½ Lg ONION
    15oz can PINTO BEANS
    5-7 cloves GARLIC
    fresh HOT PEPPERS to taste (or use red pepper flakes, or nothing...it's all optional, baby!)
    OLIVE OIL (as you like...I oil the meat, the skillet, and then throw a little olive oil on the onions)
    SEASONING for meat
    (salt, pepper, cumin, chili powder, Italian seasoning, etc...experiment or use your own favorites)
    ½ cup dry WHITE WINE (optional)
    ½ cup CHICKEN BROTH
    Pork Tenderloin Recipe directions:
    Trim the tenderloin of the sinewy silver skin.
    Coat the pork in olive oil and seasonings.
    I'm using a rub of chili powder, cumin, salt, pepper, and Italian seasonings...but use whatever flavors you like, or just keep it simple with
    basic salt and pepper--there's no wrong way to do it; as long as you don't overcook the pork, it'll be awesome!
    Pre-heat your oven to 425 F. Cooking the tenderloin at a high temperature for a short time will keep it from drying out.
    While the oven heats, sear the tenderloin on the stove top.
    In a heavy, oven-safe skillet, heat a little olive oil on medium high heat.
    After the skillet and oil are hot, add the tenderloin--it should sizzle and cook right away.
    Sear for 3 minutes and then turn and sear the other side.
    Add thick sliced onion to the skillet. Do this after the tenderloin has been turned.
    Add a little oil and seasonings to the onion.
    After 3 minutes, remove the skillet from the stovetop and place in the oven at 425 F. (be sure to use an oven-safe skillet!)
    Cook for approx. 20 minutes. If using a meat thermometer, cook until the internal temperature of the pork is 145 F.
    Remove the skillet from the oven and return to the stove top.
    Remove the porkloin from the skillet and set aside 10 minutes to rest. It is very important to rest the meat before slicing! This will preserve the juiciness and flavor of the pork.
    If you slice the tenderloin right away, the thin juices will run and much of the flavor and moisture will be lost.
    While the pork tenderloin rests, we'll complete the onion and bean side dish.
    On medium heat, continue cooking the onions in the skillet. The liquid in the pan will reduce as it cooks. Add garlic--a lot is good!--and if desired, throw in a little fresh chopped hot peppers.
    Add the pinto beans
    After a few minutes, if you like, add a little wine. It's optional, but adds a great flavor.
    Simmer about 2 minutes and let the wine cook off.
    Add chicken broth and continue simmering until the liquid cooks down.
    And that's it.
    By now the pork tenderloin has rested enough and is ready to slice.
    Serve the tenderloin with the beans and onion, and maybe a little steamed broccoli or salad--and boom!--you got a complete fancy-pants pork tenderloin dinner!

    I would never have thought about doing the onion/pintos trick. But I love both and can see how good it looks on the plate. I just struggle with coming up with which spices/herbs to use. I usually am a one trick pony with rosemary, thyme and sage. This opens up a whole new world. Thanks.

    I have been watching your videos and I have tried a few and I love the humor you bring with it all! I have to say you never let me down so I pulled a frozen tenderloin out of the freezer and am trying your recipe for dinner! I love your camera girl, lol! In our house I tend to be a ball of fire 🔥and my hubby keeps me from getting too off the ground! I bet she has her hands full with you! Lol not laughing at you -- you just remind me of me!     Here wAtching videos while I wait for my roast in the oven. Love your tiny empty kitchen filled with what you need to cook and eat well. Well almost. Wish I could send you meat thermometers. I cooked for 100 years-almost without but now often stick one in for company. But Moscato? Merlot and pinot noir also come in gallon sizes. Great team video.

    I changed up the spices for the rub, garlic, onion , red pepper flakes, salt and pepper, crushed peppercorn and garlic rub and bell pepper herb rub. I rubbed the pork down with melted butter and oiled the pan. Rolled the pork in the rub and placed in a pan to roast in the oven at 350 for 30 min's. After 20 min's I added chopped onion and basted the pork, smells great, back to the oven for the remainder of the time. I served up seasoned green beans and mashed creamed potatoes, yum!

    I'll have to try this in the oven. Right now I have one going in the crock-pot with sauteed onions and mushrooms, and one jar of pork gravy. The stuff in my oven always comes out over cooked and dry..... I think the temp settings may be off and have an oven thermometer coming. Thanks for the ideas!

    I would think that chopped red , yellow, or orange, bell peppers......oh WTH....or all three together ....would be a nice addition also. It sounds delicious already. You have a great presence for online cheffing.......lol.....earthy, with a touch of humor....lol

      At 62, I'm finally ready to commit myself to a 'forever' relationship...perhaps even with a ring and the whole nine yards, although, frankly it depends on our finances. It is hard to say, but sometimes it is more financially feasible to stay single and live together than it is to be 'legally' married. We might just have a ceremony and forget about the paperwork. I'm looking forward to cookin' with my man as it is something that we both like to do.

      Tethmes I just put another pork tenderloin in the freezer, so we can have it again in December...at our local market it's on sale for $2.99 lb., so all that meat I cooked up in this video was around $8.00 total--and we'll get a couple of meals out of it...we tend to gravitate toward whatever's on sale.

    Great video buck, was a lot of fun to watch. I was not expecting pork and beans to be so enjoyable.Thanks for the parsley shout out, it gets no respect. I can't stand cilantro so parsley makes a great way to add color and flavor to a lot of dishes. It is also easy to grow and freezes well, no need to chop it up, after it freezes you can crumble it.
    I grew up watching Julia Child on her show the French Chef. I would have paid money to hear her say horse penis in one of her cooking shows.
    By the way, if you want to fancy up your videos even more than you do, " muck up your sear" is called gâcher votre gâchette in French according to Google.

      Buck, I just read your other comments, $2.99 a pound! You buried your lead. what a price! All meat too. If you buy a lot of meat, you can cook it up and add it to zip lock bags with a lot of liquid from the pan and freeze it, the liquid keeps it from getting freezer burn. We always did that with uncooked fish in the freezer.
      I did an experiment last year with cooked turkey and froze it after cooking in its own juice and ate it as long as a year after and it was as good as the day I cooked it with no freezer burn at all. I plan to buy a lot of cheap turkey this year.
