no. surprisingly it doesnt. It is often done with fish. It gives a very unique saltiness. like smoked salt. Sometimes it is even undersalted after the process.

I followed your recipe with the exception I used about one cup of coarse salt mixed one egg white completely cover the the rind baked for 50 min. Removed the coarse salt then broiled for another 15 to 20 minutes the end result is crispy and very tasty. Thank you for sharing this wonderful recipe.
Eva Lam I wonder if you used the foil to wrap around the pork that was not covered by the salt/egg white so it would not get dry. Thank you.

They say aluminum will get into your food if you cook with aluminum foil.

Hi Derek, when she puts it back in the oven for 15 mins at the end. Did you use the same oven setting or switch to the grill setting in order to crisp the rind? I can't make out what she did there. cheers
