You cannot just select text and find all highlights using the find formatted text feature. You must use Advanced Find... this short video shows you how to select, copy and past only all of the highlighted text in Word.

Thanks! I probably want too much but any chance you can also select a specific coloured highlight?

I don't see that option in Word, but have found it in other programs like Descript and (I believe) the Goodreader or Goodnotes app does it.
