I'm currently 103kg and trying to get to that SC level of bodyfat. Feel as though i'm doing everything right (Training, cardio, sleep, nutrition) but obviously not.

I get the same, if you have lifted weights before and hold any form of muscle mass you feel it, like your wearing body armour, with the pump etc..... And then you start running, they're completely different things/motions etc, but I like both, but have always lifted weights and started running during Covid lockdowns, so I just do 5k runs now. But you can very easily feel flat, like Steve is saying here.
Do you not like porridge and mixed nuts with honey Steve? Good carbs fats and protein. Plus if you make the porridge with more water and some sea salt you get hydrated and Sodium. 👍🏻
When running what do you use to carry your cell phone? I find it hard to carry mine while running. Oh and it’s only like 30 to 45 min. Of pain in a 24 hour day - so not to bad :-)😅 running 🏃🏽♂️
You presumably could eat 3750-4250 calories if you're doing 210 minutes + of cardio/week and working out 4 times per week and maintain that condition while feeling fuller.
This has been me since I started running 6 weeks ago. Feel like crap, pumps suck, lifting days kinda suck, can’t get enough carbs, drinking electrolytes but still not enough water, starting to look skinny fat, want to like running while also hating running and can’t go on long distances. 😂

Running is going to stuff up ur joints if you keep pounding 200 plus pound on those knees its will wear out ur knees and you might need knee replacement when you get old
U in ur late 30’s you shouldn’t be tossing and turning 6-7 times are you under a lot of stress atm or could be sleep apnea you may have any loud snoring? If so get it checked out
