- Gateau in a Cage features a gold cage of caramel enclosing a sponge cake filled with wines and fruits. It is the invention of Parisian chef Jean Deblieux, who gives Julia Child a private lesson in creating this stunningly dramatic dessert.

She looked so excited to share this and absolutely gleeful as she served it. Her passionate insistence that American cooks to find their courage and get over their fear of failure was a tour de force! God love her, she was fabulous.

Season 7 Episode 12, first aired December 23, 1970 (Her 1970 "Christmas Show"). This and other recipies from Season 7 to 10 were collected in the 1975 book "From Julia Child's Kitchen".
I remember seeing this episode when it first aired, and I've been in love with Julia and everything French ever since!

I have to say- it was rather thrilling when the caramel dome came off the bowl! 😅 i may have applauded at the finished product. ❤
Not something to do often, but certainly for a special occasion, like Christmas or New Year's or the like.
I was fascinated by the gateau in a cage recipe when I got into Julia and her cooking over a decade ago. I tried numerous times to create that "golden dome of caramel" and all I got was frustration and sugar burns. It's a work of art but definitely not easy for any home cook not used to working with caramel.
I just love her and loved the movie 🌻🌻🌻
