Gâteau in a Cage | The French Chef Season 7 | Julia Child

Gateau in a Cage features a gold cage of caramel enclosing a sponge cake filled with wines and fruits. It is the invention of Parisian chef Jean Deblieux, who gives Julia Child a private lesson in creating this stunningly dramatic dessert.

I was fascinated by the gateau in a cage recipe when I got into Julia and her cooking over a decade ago. I tried numerous times to create that "golden dome of caramel" and all I got was frustration and sugar burns. It's a work of art but definitely not easy for any home cook not used to working with caramel.
