split squats are going to give better results than a reverse lunge.
Not necessarily. The standard split squat can be quite a quad dominant exercise.

I don’t mind doing all of this as long as I don’t end up with big butt. I hate big butrs. I want it all toned normal and small

You could try heavy resistance bands or tubes instead of the cable machine. Attach them to heavy furniture legs or a door.
