Soft Almond Cookies/Gluten Free Dessert

  • Soft Almond Cookies
    Ingredients:
    2 cups (260 gr) of Almond meal
    3/4 cup (160 gr) of Granulated sugar
    2 egg whites
    pinch of salt
    1 tea spoon of Almond extract
    1 tea spoon of Vanilla extract
    Optional:
    Some whole almonds for decoration
    Method:
    In a stand up mixer mix egg whites with a pinch of salt.
    Add sugar, mix until soft peaks.
    Add Vanilla and Almond extracts.
    Spoon by spoon add almond meal to egg whites and mix until almond paste.
    Transfer almond paste into a piping bag with a star piping tip.
    Line backing sheet with parchment paper and pipe out your cookies about 2 inches apart.
    Bake in a preheated to 350 degrees Fahrenheit oven for 15 min.
    Almond cookies are a gluten-free cookies and can be stored in a tight container for up to 2 months.

    No need to look for almond cookie recipes anymore. This was exactly what I wanted. Thank you for sharing your recipe! I didn’t have piping bag so I used small ice cream scoop. Instead of whole almond I used sliced almond and covered like horse shoe cookie. It turns out beautifully. My family loves it! Thank you again!!

    Love these ...this is what we make back home they're called Acibadem Kurabiyesi (Turkish biscuits) traditionally also includes bitter almonds.P.S almond flour and meal are two different things ...almond meal is typically made from raw (unpeeled) almonds, almond flour is made from blanched (peeled) almonds. Compared to almond meal, almond flour has a finer texture and lighter color. Reckon for this you've used flour. Thanks for bringing back childhood memories .😊🙏🏻

    Loved the recipe it came out great. The only change I incorporate is that I used 1/2 cup and 2 tablespoons of sugar instead of the three-quarter cups and it was perfect for us I did have a hard time with the mixing because of my arthritis and trigger fingers however I manage I’m wondering when coming to the part where we added the almond flour spoonful by spoonful can that be done in my KitchenAid mixer please let me know and thanks for such a great recipe

      Thank you for your comment. Yes, absolutely, you can add less/ more sugar to your taste and also, you can just spoon out the cookies instead of piping them out and use any equipment that works for you.❤

    I made them as you demonstrated. The problem is the oil in the almond extract appears to deflate the egg whites. I made the recipe twice. The second time I let the eggs get almost to stiff peak before adding almond extract. In the end they tasted quite delicious, but looks like just formless Mounds rather than beautifully shaped from the piping as yours look. Not sure how you got yours to look so crisp and well shaped? Oh well maybe I can look at another recipe to see how they got theirs to hold the shape. The flavor of yours is quite exquisite.

      William Love Thank you. Try to not overmix the batter. You just need to fold in the egg whites. The reason, I think yours did not hold any shape, because the dough was too runny. It has to be somewhat stiff consistency. 🤗

      NastassjaCanCook I have been baking angel food cakes since I was 5 years old. I know how to beat egg whites and fold in ingredients. I truly think it was the oil in the almond extract. After I added it to the egg whites, I must have beat them for more than 5 minutes. They were runny the first time I made the recipe before, I folded in the dry ingredients.. The second time I made them, I beat them till they were almost stiff peak then added the almond extract. This time they were slightly thicker and held their shape but not enough that they didn't turn into a lump in the oven when they were cooking. Another recipe suggests that one leaves the cookies out overnight to harden before they are cooked. In that recipe they don't even whip the egg whites first. They just put the blanched almonds, sugar, and eggs into a food processor. Next year I'm going to get some European almond extract. You only use a few drops. On Amazon everybody Raves about how good it is with a recipe such as this. I know this is what they use in Sicily. Thank you for your response. Like I said they were delicious.

      Hi William, yes, the oily Almond extract does "flatten" the meringue. We added it to the almond flour, rather than to the the egg whites.

    Thanx 4 sharing the delicious almond cookies recipe.
    Can i make these cookies by using Diabetic sugar as this has low glycemic index.
    Secondly, do u think 6 speed hand mixer will work better too. I'll be grateful if u can answer my Qs. Thanks!

      Yes, you could try substituting cane sugar to diabetic sugar. I would suggest to whipping the egg whites first, then adding the sugar. And yes, 6 speed mixer would work. I remember my grandmother could whip the egg whites by hand, with just the whisk. 😉She probably had less than 6 speeds 🤣🤣🤣(joke)

    What size tip did you use? I have tried to pipe these cookies and the dough is too thick to pass through the tip. I noticed that different brand icing tips #'s are not universal in size. Please help! Thank you!.

      Sometimes, I use Wilton 4B. Sometimes, Wilton 1M, they are both " open star tips." The thickness of the dough depends on the size of the eggs you use. When the dough comes out too thick, I don't use the piping tip. I just pipe it straight from the piping bag or use ice-cream scoop, 1 tablespoon size. I hope these tips are helpful.       I am not sure what can you substitute it with. In some baked goods, egg whites can be replaced with apple sauce. In this recipe, you need egg whites as a binder and also to achieve chewy texture of this cookie.

    I just made 'pecan balls' & their recipe was virtually the same as yours. The pecan balls I was trying to make lost the ball shape & came out more like a cookie shape? It was also very crumbly...fell apart in my hand just as soon as I went to pick up? I think it's due to the almond flour? I like the fact that almond flour is more healthy but it also gives the recipe a nice almond taste but everytime I use it in cooking, the above are always the end result.
    Please, what am I doing wrong?

      @@NastassjaCanCook your recipe was the same except it asked for 2 sticks of butter which I melted in microwave). Aside from this, I used correct amounts. I think I'll try again with less butter & white flour.
      I will also try your way....
      The funny thing is, my pecan balls though too crumbly, tasted wonderful!
